Hi mam! I love cooking, but I do a lot of research, I tried this recipe without researching and followed a recipe by a cookbook! It was disaster, now I know why! Yours is the best recipie, coz u ask to fry the wet masala (coconut and peanuts) first, which is really important and most of the recipies ask you to put water immediately and it leaves the curry uncooked no matter how long you cook it!! Yours is the best, I guess its due to experience, am gona follow ur recipies only! thanks!
Auntie-ji, you're killing the teflon on the skillet with your steel ladle. In any case, my mother's baghaar-e-baigan has more texture. You actually see the coarsely ground peanuts and some of the spices. I suppose she does not grind the spices quite as fine as you do. In my recipe, which is a modification on my mother's, I baste the eggplant lightly with butter and broil them in the oven, or saute in a really hot wok. I figure I can do without the calories that creep in with the deep frying.
