Ingredients Quantity
Eggplant 5 no
Water as required
Oil for frying
Oil 1 tbsp
Ginger chopped 1 tbsp
Garlic chopped ½ tbsp
Dry red chilli 6 no
Fresh red chilli 1 tbsp
Spring onion chopped 2 tbsp
Red chilli sauce 3 tbsp
Soya sauce 1 tbsp
Vinegar 1 tbsp
Salt to taste
Water as required
Spring onion chopped 1 tbsp
Spring onion chopped for garnish
Method :-
1. Wash and cut the eggplants into strips a bite-sized pieces.
2. Soak the pieces in water for about 10-15 minutes to remove any bitterness and prevent them from turning brown.
3. Place a kadai on medium flame and heat oil.
4. Add the eggplant pieces and stir-fry until they are golden brown and tender.
5. Remove the eggplant from the kadai and set aside in a plate.
6. Place another kadai on medium flame and heat oil. Add chopped ginger, chopped garlic, dry red chilli and chopped fresh red chilli sauté well.
7. Now add chopped spring onion, red chilli sauce, soya sauce, vinegar and salt mix well.
8. Add water and mix well.
9. Add chopped spring onion again and mix well.
10. Turn off the flame and pour the sauce over the fried eggplant on a plate.
11. Now garnish with freshly chopped spring onions.
12. Enjoy your spicy and flavorful baigan in hot chili sauce!
