Here’s my take on the baked chocolate tart. Enjoy!
▶Chocolate Tart◀
Yield: 1 tart of 16cm diameter
⊙Tart Shell⊙

⊙Chocolate Filling ⊙
Dark Chocolate 125g (callebaut 811)
Heavy Cream 99g
Whole Eggs 33g
+ a bit of vanilla extract and a pinch of salt
① Heat the heavy cream/melt the dark chocolate to 45~50℃.
② Stir them/blend them and make a ganache. (make sure they come together into a glossy/smooth mixture. Take a look at my ganache video: • Making the perfect gan... )
③ Add the whole eggs and stir well until everything looks smooth and homogenous.
④ Pour into the tart shell and bake at (pre-heated to 140 ℃) 140 ℃ for 12mins.
⑤ The time/temp is only a guideline so just stand in front of the oven and stare at your tart to find the perfect time. If you see cracks then you’ve baked too much - if you see small bubbles developing on the surface of the filling then take it out. The filling must be wobbly right after out of the oven.
⑥ Let it cool down completely then serve.
Storage: Can store in the fridge up to 3 days. (but the tart crust will be completely soft - it simply can’t be crisp).

What an awesome dessert! 😋 I adopted the recipe into six 3” tarts, 3mm thickness. My family loved it! My 85 year old dad, who is usually not a fan of desserts, adores it and said that I should make this on a regular basis! Thank you Hanbit! 🙏

Hi, the first time I made this tart, it was a huge success! But the second time, when I took the tart out of the fridge, the chocolate ganache has white streaks on it, do you know why?

Hi Hanbit, thank you so much for the great content! I made this tart yesterday and it was excellent. Could you please share the depth of the perforated tart ring you used? It would be useful to know when scaling up/down the recipe. Could you also share the depth of the smaller tartlet rings you use in your other videos. Also, your tart shells look absolutely perfect. Is there anything you do to tidy them up e.g smooth the edges with a fine micro plane?

Hi Hanbit! I really enjoy your videos as an inspiring baker. I have a question that I would love your input on. If I make this recipe with one tart using a 9.5 inch tart pan, can I follow the recipe here? Will the ingredients that I need for the filling increase linearly? Also do you recommend a minimum amount of cooling time after cooking?

Hi hanbit I had tried it.. It turn up to be well... But I just feel tat it is slightly too sweet or.. I'm using the brand as wat u r using dark callets 54.5%... Hmm.. can I replace with milk chocolate or any other brand that is less sweet? Looking forward to your advise. Thanks a lot.

Hi Hanbit, I tried this recipe but the chocolate mixture was very thick, not of a pouring consistency like yours, any ideas of what I did wrong. Having said that once I had put a mirror glaze on it it looked and tasted amazing…

Can i pipe some salted caramel before piping the chocolate mixture… does the caramel also gets cooked and ruin the tart????
