BAKED SALMON

Ingredients:
500g Salmon Fillet
salt & pepper
juice of half a lemon
1 head garlic, minced 2 slices mozzarella or cheddar cheese slices
80g mayonnaise
100g cream cheese, softened
40g parmesan cheese
20g fine bread crumbs
parsley & tomatoes for garnish & plating
Procedure:
1. Pre-heat oven to 350F.
2. Prep Salmon Fillet. Season with salt, pepper, and lemon juice. Let
sit for 5 minutes.
3. Work on the topping. Combine softened cream cheese, mayonnaise, minced garlic and half of parmesan cheese. Stir well. 4.
4. Add salt and pepper last, if needed.
5. Top the cream cheese mixture on the seasoned salmon fillet to make the top layer. Spread evenly.
6. Sprinkle remaining parmesan cheese, fine bread crumbs and place 2 slices of mozzarella
7. Cover the baking dish with foil and bake for 20 minutes covered. Plus 10 minutes uncovered.
8. Garnish with minced parsley and side with sliced tomatoes or your choice of colourful buttered veggies.
