This is true, I use much less cheese on my Ziti. I just tend to put a mixture of mozzarella and cheddar on the top and then put it under the oven grill for about 20 minutes until it's bubbling and gone a little brown and crispy. I love it with Ditalini en pasta e fagioli. Or, use a bit more meat and hotter spices and then layer pre-cooked calamaretti over the top with plenty of mozzarella cheese and tomatoes mixed with tomato sauce. Put the whole thing in the oven for 25 minutes until bubbling.. mwah x
