Makes 6 large blueberry muffins.
Grease a jumbo muffin pan with olive oil spray. Set aside.
1 and 1/2 cups blueberries (fresh or frozen)
3 cups all purpose flour
3 tsp baking powder
1/2 tsp cinnamon
1/4 tsp baking soda
1/4 tsp salt
1/3 cup butter melted and cooled
1 cup sugar
2 Lg eggs room temp
1/3 cup vegetable or canola oil
3/4 cup milk room temp
1/2 cup sour cream room temp
1 tsp Vanilla extract
Coarse sugar
Sift together dry ingredients first. Set aside.
Whisk together butter, sugar, eggs, and oil. Next whisk in extract, sour cream and milk. Add dry ingredients in. Do not overmix.
If using frozen blueberries powder with flour. Add blueberries into batter. Fold to incorporate.
Fill muffin pan to the brim!
Sprinkle with coarse sugar on top.
Bake at 425 for 5 min. Reduce heat to 350 for 30 min. Until toothpick comes out clean. Cool for 5 min then remove from pan. Serve with butter!
