This ciabatta bread recipe is amazingly simple-there's no kneading, and you don't need a fancy stand mixer to make it-and it tastes like it just was baked fresh at your favorite bakery!
I used to think ciabatta had to be made using my stand mixer because of the amount of liquid the recipes need, and it still took forever for the dough to form in the mixer. This homemade ciabatta bread recipe is WAAAY easier, and the results are amazing!! The ciabatta dough ferments overnight, which means that there are loads of bubbles and, since this recipe calls for bread flour, you get a perfect chew.

Hi Emma, is the 1/4tsp of dry yeast correct? I’ve tried the recipe twice and both times the breads are like cricket bats despite of proving 18hrs & 2hrs 😃 I’d love this recipe to work for me!

Great video! I love no knead breads. I’ve been making this for a while, only I don’t proof on a towel. I place the dough directly on parchment which is on the pan, cover with a flour sack towel to proof. Remove towel and bake.

There’s little stall back in the Philippines, where I buy sausage in ciabatta bread every Saturday! Unfortunately, I can’t travel back there due to the pandemic. I will try this, and recreate and eat it with sausage. Perfect timing ☺️

I love this recipe, however on the internet I've seen many ciabata recipes that only rise for 2 hrs. Every 30 min, they stretch it and fold it over itself (dipping your hands in water helps). Is this better or just a different technique?

This is just a different technique. In most recipes, the numerous stretching and folding or kneading in other breads is what develops the gluten. In this method, you do away with most of that, and let time do it instead through bulk fermentation. In this method, gluten is developed as well as the flavor. Hope this helps.

This bread is superb, and one in the eye for people who claim you need fancy equipment to make ciabatta. I’ve just made my second batch of ciabatta and this time i divided the dough into four, which worked just as well and fitted better into my freezer. Thanks, Gemma.

Hi Gema. M just follow you and today I made it perfectly. Many thx! Only since I live in Indonesia and very hot here 35'C. So I ferment the dough only 4 hours, since my dough was rising so well. So I keep it in the chiller, and the next day I follow your instructions. I baked after proofing 1,5 hours because it's already bigger twice. And the results were great with big open crumbs. ❤

Oh my gosh, this is the easiest Ciabatta recipe I've seen yet! I can not wait to make this!!! Update: after watching this video last night I put the dough together. When I got home from work this afternoon I finished putting it together. Two hours later we were eating it for dinner. HANDS DOWN the easiest bread recipe I've ever worked with and the bread was delicious! We shared a loaf with our neighbors and they loved it just as much as we did! Thanks Gemma!!

Thank you Gemma, made this twice now, excellent bread. I found also an addition of a TBSP of honey in the water along with the EVOO makes the crust a bit nicer and crunchier while keeping the delicate bubbles inside beautiful. The yeast loves it.

Making this recipe for the second time today, because it was absolutely amazing! For the German/Luxembourgish people out there: I used "Mehl Type 505" and "Dinkelvollkornmehl" and it turned out sooo good, please give it a try! But I wouldn't recommend "sniffing" the dough after letting it rise for 18 hours. I took a deep "sniff" because I wasn't expecting for it to smell so strongly but oh boy, I was wrong! hahahahaha Lots of love from Luxembourg

Is your recipe correct? It says 225ml of water for 567g of flour which is only 40% hydration - ciabatta should be double that I think?

I make ciabatta loaves every other day. I just took 2 loaves out of the oven about 2hrs ago. Although my recipe means I have the bread just after 3hrs, rather than waiting 18hrs or overnight. But it tastes incredible. It's definitely our favourite bread. I love making bruschetta with it and it's lovely toasted with a slathering of Irish butter. We stopped buying shop bread about 18 months ago and we make all our own bread now, including bagels. I can't see us ever going back to store bought again. There's nothing quite like homemade bread. It's blowing a gale here in Northern Ireland at the minute and we still have snow on the garden that hasn't defrosted for 5 days.....I wish I was in Sunny California right now, lol. Big hugs from Co. Yes, you can use just bread flour. Watch the amount of liquid to add and just add the amount needed to reach the same consistency.

When it comes to bread fermenting/ proofing, there is no restrict timeline. The telltale sign you use is how your dough looks: if the dough has doubled in size, almost feels lighter and a finger indent doesn’t spring back right away, then it's ready. (for focaccia: the dough will rise and those lovely big bubbles will form.) In sourdough baking, it should also have bubbles or "blister" on the skin. Yeast feeds on added sugar like honey or sugar , and sugar from flour. Fermentation/proofing time will be shorter if you live in a warm and humid place or your dough has more sugar. On the contrary, if it's cold and dry where you live or your dough has LESS SUGAR, it will take longer to get you there. Ciabatta: In this specific recipe, what you should look for is: after the long time bulk fermentation: it has well risen, looks bubbly and smells boozy (refer to video 1:50). After the final proofing, it should puff up, bubbles form and has well risen (refer to video 4:10).

Yes, May. You can substitute extra strong flour or bread flour for whole wheat flour. A good rule of thumb to keep in mind while alternating the recipe: note to hold back some liquid by using up to 3/4 in one go and adjust it accordingly to get the same consistency with mine.

Hey! Thanks for the recipe. The taste is amazing! I made one time but I remember I did not use 1/4 tsp of yeast. I used a little bit more. Now reading thebrecipe and watching the video it seems your 1/4 tsp is bigger than mine. So my question is. Is it really 1/4 tsp of yeast? Thank you!

Hi, I have all purpose flour and vital gluten seperately. How much gluten should I add to the flour for this recipe then?? Also, should I add bread improvers?

Thanks for reaching out! To make bread flour : measure 1 cup of AP flour, replace 1 1/2 tsp of it with vital wheat/gluten. I did not use bread improver but in general, you can use 2 tablespoons of bread improver for every 3 cups of flour. A good rule of thumb to keep in mind while alternating the recipe: note to hold back some liquid by using up to 3/4 in one go and adjust it accordingly to get the same consistency with mine. Refer to video 1:34 for the consistency, soft and wet but not runny or liquidy. Hope this helps !

Hi Gemma, I have just started to make the dough, but the quantity of water is not right for me. 226 ml of water for this amount of flour is way too little for me. Cannot make the dough. So I doubled it. Then I looked at the cup measurement which says 2 cups. Well, 1 cup is roughly 236 ml. So isnt the recipe should say about 472 ml of water?

Great recipe. The wheat flour is also really good for giving your bread a hard outer crust. I also add a little wheat flour to my pizza dough for a nice crunch but chewy crust

I know this is difficult to understand, but people around the world measure in different ways. We have to give cups/metric measurements and imperial measurements. It takes too much out of the flow of the presentation, and really slows it down. We know, we tried it before, and it was just as tricky. Technically, you can do that. But you will need to make adjustments with the amount of liquids as flours do not absorb liquids the same way. Gradually add to the dry ingredients until it reaches the same consistency shown in the video. I hope this helps.

Hey Gemma! I live in Egypt which is a very tropical country and i could feel my kitchen is at 32 degrees celcius in a normal day.. so is it okay if I just ferment it in the chiller? Or let it ferment in my room temperature for like an hour and then put it into the chiller for overnight? Thank you 😁🙏

I will be starting a ciabatta batch today for tomorrow (one of many nice things about being retired). I will be doing this in a large Pyrex bowl but would a stainless steel bowl work as well? I agree with your husband about your child ejecting the "binky" for a taste of the bread. I have a higher end Zojirushi bread maker but still like to craft my breads by hand at times. I like the way you respond to questions from followers. A lot of posters just toss them out and I see no response back to their followers, your responses reflect your passion and love of baking!

Thank you for the kind words, Matt. I don’t think I’ll lose the accent especially when I travel to Ireland almost every year. 😊 A stainless steel bowl will work well, too. If it’s cold where you are, then glass or even plastic will work well during bulk fermentation. I hope this helps.

So I followed the recipe exactly using a kitchen scale, but it didn't turn out right. Your dough was much less sticky and appears to be more congestive, whereas mine was more inclined to stick to my hands than itself. It also was almost runny, so it spread out horizontally instead of rising. I am certain I used the exact weights and volumes listed on the website, so I have to ask-what could have gone wrong? Next time, I'll try leaving out some of the water and see what happens. (Unless you happen to see this and respond before I begin, lol!) I had really high hopes, as it fermented very well and seemed to be heading in the right direction. Hopefully next time it will come out looking like yours!

Hi. I suggest you bake and then freeze the bread. Pop into the oven when you want some. You can add olives, right before shaping the breads. I suggest you drain it of any liquid before you add to the dough. I hope this helps.

It looks like balsamic vinegar. I dip mine in this with a little olive oil (sometimes I get flavored ones for this)

It may have something to do with your flour. Flours do not absorb liquids the same way, because of how they were milled, where they are sourced, etc. Hence some may need more, or less than what the recipe requires. Your dough may have needed more hydration. I suggest you check the recipe, and use it as the reference when baking www.biggerbolderbaking.com/no-knead-ciabatta-recipe/
