Some techniques I developed making bread over a gas burner, during a recent stay in Haiti. While I did have an oven, most Haitians don't, and I wanted a method that did not use as much gas. This is a compilation of clips. The background noise is nearby schoolchildren.

I had a gas range with an oven, but it had a pilot light. I did not realize how much gas the pilot took until I quickly used up a tank, and my hosts were horrified at my consumption. Most Haitians don't have ovens, only burners or charcoal fires, so I decided to bake over a flame- to see if I could. I also baked bread in a solar oven made with a cardboard box, but it wouldn't brown. All the leftover garage sale/Goodwill items in America are to be found in the market in Haiti. It's amazing.

Thanks for showing us how you arrived at your preferred method of baking bread. I can see it's been trial and error for you and you have saved me a lot of trouble and given me confidence to have a go myself.

Thank you so much! Right now I'm in the country side of Indonesia and there are very very very few places that sell ovens. And if I were to purchase them, I would have to pay 2x $US. Your video helped me save a lot of me, and learn the old ways of baking! Thanks!

I've never tried this before! In fact I never even thought to try it before I found your video! What a good idea to coat the bread pan with oatmeal too.

Thank you so much, Peregrina! My husband and I are just starting out and we don't have much appliances and we only have an induction stove. I wonder how can I bake bread using our stove. And yeah, I agree. Ovens consume a LOT of gas.

This is marvelous!! The bread looks terrific and your explanation is so clear that I feel confident to attempt stovetop baking myself. Now, as much as I admire your phenomenal display of ingenuity, I must chide you for not including at least one recipe (equally straightforward, I can only imagine) for those mouthwateringly delicious looking loaves! All the same, thank you very much.

@beckyezra1 Do you mean a silicone pan? I do use silicone pans in my electric oven to bake bread and I love using them- in the oven. For this stove-top method I only used metal pans, with the oil and oatmeal coating. I think the temperature might be too hot for a silicone pan on the top of the stove.

Good luck with the experimenting with the induction cooktop! I am a fan of them, but have never tried to bake bread on one. One suggestion I might have to start would be to try smaller pieces of dough and see if it is possible to bake a roll-- then go on to a loaf. Good luck!

@jshaaz I don't know if brown paper would help you or not. You might want to crush the paper up before you put it into the bread pan, so that it's irregular and there are some air spaces. The important thing is to give a little insulation/air space, which I got by using the oatmeal. Give it a try and see what happens! I burned a few loaves figuring out this method- see what works for you. Good luck.

Thakns what a great video I have tried coffee cake in my cast iron skillet with a lift to prevent buring but could not stop that I will try the dutch onen and that bread. Thanks

Thanks heaps for sharing your experiment! This would be great for camping without. Usually I steam my bread and it has great results.I like your idea of using oats to make a non stick barrier, I hadn't thought of that!

a very interesting alternative to oven baking. I suggest you change the position of the pan or better still rotate around the ring of the stove every 15 minutes to even the browning at the bottom. Happy baking.

Do you put water in the pot that's on the flame ? Can these be used for cakes? I found your video very interesting and instructive. I hope it works for cakes.

Sorry I am not getting back to you till now. No, I baked this bread dry, without any water, just as I would have done in an oven. I think for this technique, cake might have too much sugar in it and would burn. Perhaps steaming a cake in a little bit of water would keep a cake from burning. Hope you experimented (with just a little bit of cake batter- in a small tin or can, perhaps-- and saw if you could do it or not. It would need to be up and away from the flame so it would not burn.

I suggest a test with a bit of water in the tin can. This may help in creating steam inside the pan. This will ensure the crust is getting nice and brown...

I'm curious as to why? Your range has an oven. Oven's aren't expensive. Ranges are technologically harder to make than ovens. The pots you describe, the tunafish cans, etc, are all high-tech society items, so this cant be for rustic/survival/minimalist reasons. Color me lost!
