Baking Bread Using a Stand mixer!

Hello Everybody!
New recipe video for you to enjoy today, follow along as I bake a loaf of french bread! Made it last night and we've already destroyed it (super tasty)
I bake my own bread 1-2 times a week because I find it super easy, and have had a lot of practice. This time I used my stand mixer, but I plan on showing a hand made loaf in the future.

ingredients:
3.5cups flour
1.25 cups warm water
1 tbsp yeast
1 tsp sugar for yeast, 1/2 tbsp with dry ingredients
1 egg + 1 egg white to brush on later (put your extra yolk in the bread if you remember)
1 tbsp cooking oil
1-2 tsp salt
oven temp:450f cook time: 25m +5m after brushing on eggwash

I've been trying to make bread for many years. Moved from Calgary to Florida 20+ years ago. Every time i tried it goes straight to the garbage can. I thought maybe it's the flour here, maybe the water, maybe the non existant altitude because my pie crust was never as good here than it was in Calgary. Now that i'm retired, i decided that i was going to keep trying making bread until i get it right. Tried many videos without success but i wouldn't give up. Then i watched yours. It was so simple that i just had to give it a try. I could not believe it! I finally made a delicious loaf of bread. Thank you, thank you, thank you. Cant wait to check out your other recipes. ❤

When I started my bread making quest, I first found your video and made my first bread following your instructions. It came out great; but I somehow felt that I needed/decided to continue looking at other videos for more "tips". Now after 3 weeks and much experimentation and confusion from those other videos, I've come back to your video in one fell swoop. I don't need complication and confusion, I just want to bake a loaf of bread; And your video teaches me that... Thanks

What a great video, really easy to follow and my loaf came out and tasted great. Rolled mine a bit thinner than yours as couldn't tell what thickness you used. Thank you.

Followed your recipe… I was so nervous about how it would turn out (was my first time making bread)! After it came out of the oven I added a whole egg wash ontop of loaf (made the crust like a crunchy French bred) it was delicious with home made butter 🧈 Thank you 🙏🏻☺️🥰🥰made 2 🍞

I love these stories, it makes me so happy that people are giving it a shot and finding it fun or delicious. I use egg wash when I make buns or a thinner loaf, gets you that good golden crust for sure.

Ahh he's going to love it! This recipe doubles very easily (just multiply everything by 2) so I'm known for bringing fresh bread to dinner parties when we're allowed to have them

I’m trying this right now! So excited! Wondering if I could add some flavor like thyme or rosemary and at what point would I include it?

I've started adding flavours to experiment! Best results come after the first proofing period, I'll roll out the dough and sprinkle on my flavouring then fold in half and roll again before rolling it up into the loaf shape. Works out well, i've even added chopped green onion,bacon, and cheddar with great results!

This is by far the best recipe to make bread in an oven but I have a question. I am planning to spend a lot of time in an rv in the next months where I will not have an oven. I would like to continue making your bread. I have a bread maker. Tried the recipe but the bottom was light and airy but the top heavy and flat. I dissolved the yeast in warm water and sugar first. I think that it is where I went wrong. Also, when I checked in the window it looked wetter than it should. Do you think I should reduce the water a bit or let the machine take care of the yeast? I would like to keep using your recipe. Any advice would be greatly appreciated. Thank you

I would try it by letting the bread maker take care of the yeast, they have a bit of a process to them. I wish I still had mine!!!! Now I want to test the recipe in a bread maker too!

🇨🇦 I was surprised the oven temp at 450, I have only used myself 350 and seen bread done at 350 on other channels. I am new at making bread though.

Depends on crust and style of bread you are going for! This recipe was based on a French or Italian style loaf.

This might be a dumb question but could I bake this is 2 loaf pans? I want to make this more of a loaf shape. I love this recipe and so does my family! Thank you for such great easy instructions!

Yes you can! 1 large loaf pan or 2 smaller ones works out well for me. I use this recipe for so many shapes because of how easy it is.

For better accuracy weigh your ingredients in grams. It would be great if cup users also included the gram weight. That way they would get more subscribers and more hits on their channel.

I've never had a scale in my kitchen, but it's something to think about. Grandma taught me with the cups, and I never looked outside of that!

Are your cups American cup which is 237 ml, or the rest of the world cup which is 250 ml? It makes a big difference for bread hydration. Thats why bakers use grams and not cups. They Weight everything this way you don’t need to had a bit of water or flower.

can I use milk instead of water. what is the dif to a milk loaf please.

It will work but be riched and sweeter, less crisp to the crust. More like sandwich bread! Make sure the milk is not cold when you add the yeast to it.

What happens if you don’t score it?

It can burst the bread and crack it, the scoring releases steam for you. I do add spices and things occasionally, usually when I'm kneading. Sometimes it doesn't rise as well for me so I'm still figuring that part out.

Yes AP flour is kind of the standard go to one around here. I don't keep the other flours on hand mostly because of space issues.

Confirmed, plain flour and AP flour are the same. They have different names in different places apparently!

All purpose! Keeps it easier for me, I use it for everything as I have minimal storage space

What sort opf yeast is he using? The scraping of the spoon on the metal bowl overrides what he's saying.

To be more specific I use Fleischmanns traditional active dry yeast. Most dried yeast in the store is of either traditional or quickrise/bread maker variety.

@@SeanandAlexis Where i come from the term Traditional isnt used. Its Active, Instant, and some brands do a Surebake. Sometimes takes a bit of figuring out which one is the equivalent.

Makes sense! I would go with active. I packet or 1 tablespoon. Instant works too, just doesn't have as much flavour. Never heard of surebake though!

Yup! We do it that way when we want sandwiches for our lunches. Don't forget to grease the pan though!

Was the crust hard? Last time I made bread my crust was a little hard. I have no idea why. I used a stand mixer, all purpose flour, instant yeast.

Covering it while raising can prevent the crust from drying out for you! How hard did it get? I've had crunchy crust but not overly hard, unless I cut into it a few days later

@@SeanandAlexis yes I do always cover my bread when rising. The crust was very hard. Maybe instant yeast did not work well for me. I used to make bread all the time and never had problems with it, it’s been a few years since I made bread,first time few times I have ever made it with a stand mixer. Maybe I am over kneeding it with my mixer? Thanks

It makes for a crispier crust but is optional. I have leaned towards not recently, as we have been making the recipe in a loaf pan for sandwiches.

I swear that instant yeast doesn't have any flavor compared to dry active. I made two loaves with it and while they both puffed up nicely, neither had that delicious yeasty flavor we all look for in bread.

That's why we buy the traditional yeast too. I won't use quick rise or bread maker versions, they really don't develop flavour well. Currently have one of those blocks of dry active in my fridge too! I bake enough it's worth keeping on hand

Finally a recipe that makes ONE loaf. (I never understood the point of baking FRESH bread only to leave a loaf to get stale for the next day. Yuck!)

Right?? Best I get out of fresh bread is a few days, and I'd rather make more later on than have it stale.
