Recipe (makes roughly 1 dozen):
2 cups all purpose flour
1 Tablespoon baking powder
1 teaspoon salt
1/2 cup cold, cubed butter (1 stick of butter)
1 cup cold milk, buttermilk, or slightly soured milk (not rancid, just slightly acidic. Can add 1 teaspoon of vinegar to fresh milk to replicate. The acidity interacts with the baking powder and creates fluffy biscuits)
Preheat oven to 425 degrees Fahrenheit. Whisk the dry ingredients together in a large mixing bowl. Cut in the cold butter using pastry cutter, a fork, or fingers until butter chunks are roughly pea-sized and incorporated into the flour mix. Stir in milk until a thick but shaggy and sticky dough forms. Lightly flour a bread board or surface and turn the dough out. Form dough into a rough disc, then roll out with a floured rolling pin until 1/2inch thick. Cut biscuits out with a floured biscuit cutter or the rim of a drinking glass. Place biscuits, touching, into a glass baking dish. Bake at 425F degrees for about 15-20 minutes or until golden brown.
