you did it all wrong! 😅 You're supposed to velvetise thin strips of cheap beef. You apply baking soda to the strips and let it work for about 30 minutes. The quantity is 1 tsp baking soda per half a pound of beef. After 30 minutes you rinse off the baking soda thoroughly. The meat will be freakishly red and that's how you know it worked. Now use the beef in a black bean and cashew sauce and enjoy.

@@vaazig Same as baking powder, tenderises the meat. It's usually used in stir fries, which is why Chinese takeout meat is super tender, and especially in dishes like chili prawn, gives it the springy texture.

I think you've gotta make a solution then wash the baking soda off the steak before seasoning and cooking it. If you're adding it straight, make sure it washes off entirely otherwise you'll definitely be stuck with the taste.

Never use baking soda that comes in plastic bottles. The baking soda picks up the plastic bottle chemicals and tastes really, really awful! If you're going to use baking soda, only buy the stuff that comes in cardboard boxes. Also, baking soda ruins the taste of meat!

Have you tried washing away as much of that baking soda on the surface of the meat with regular water then patting it dry? Or did it just penetrate too much into the meat?

Very true about baking soda giving the meat a weird flavor! I used it on pork loin chops and the meat was tender and had beautiful color but the pork flavor just wasn’t there.

I hate the way baking soda feels on my bare hands, makes them all soft and slick when I try to wash it off. Same thing with moisturizing hand soap. I gotta specifically buy the non-moisturizing foaming kind or else my hands will bleed when I lift heavy iron at the gym.

That "baking soda aftertaste" is the reason why Chinese chefs use saucy marinade with some sprinkles of baking soda instead of straight up baking soda. You also gotta add sauce to minimize that aftertaste more.
