Greg, as you know I've been watching every video you have made, not because I am a stalker, but because you do GREAT work! The single most important thing I have found in doing your recipes and techniques in my own kitchen is GRINDING YOUR OWN MEAT. I have found that the cuts are not as important as the fact that you take a chuck and grind it yourself. The difference in flavor and texture is amazing. I use the large die on my Kitchenaid, cut the chuck in 2" pieces, put it in the freezer for 30 minutes, and it is wonderful! After you put the meat through, follow with a piece of bread and the grinder practically cleans itself. Thanks for all the hard work, and well deserved rewards in eating the fruits of your labors. I enjoy the emotion you bring to eating well. Burak, thank you for getting Greg to make your burger! Teşekkür!

Lots of key burger things going on here, and honestly this is the way patty likes her brioche bun (cuz they are too "puffy") looks like a perfect cheese burger to me man, love the extra sear at the end too ! cheers man !

I’m from Tampa . My home town . I left the USA 6 years ago and dearly miss Tampa Cuban bread and sandwiches !!!! Back in the day I would make hamburgers shaped correctly ; using Cuban bread !!!! Dios Mio !!!! The place to buy the best Cuban bread is in Ybor City ! La Segundo Ave backery !!! Maybe one day you could create a hamburger using Cuban bread ? To my knowledge ; I’m the only person that I know of that has done this ? Also a Philly cheesesteak on Tampa Cuban bread would be amazing !!!!
Greg, what you did well on this video was take a couple extra moments to explain some of the basic techniques you usually gloss over. Perhaps because this recipe was unique in various ways, you felt a need to revisit caramelising onions, forming the pattie etc. It was great.
Thank you Aaron. I did a burger basic video a while back, but recently I've been getting a lot of questions, like how I form my patties. You're right though... I think this burger inspired me to go over some of the basic stuff.

This was a great video and I can't wait to try this burger. The removing of the inside from the brioche was what I have been doing with these buns since I have been using them. I think that too much bread on a good burger is a sin. Great work Greg, Keep it up.
I think I would shed a tear or two, grinding up a tenderloin. LOL I have to say, though, that is one magnificent burger! I love the finishing touch of cutting it in half and standing it on edge. And I'm with you, I can't see any condiments improving on what's already there. Those caramelized onions are all it needs. Yummy stuff, Greg!
LOL! I'm sure a few people did. I just like to keep it as real as possible when I do these copycats. I've had one request that uses horse meat... Not easy to source and I don't know man...
High quality burgers are a thing nowadays in Istanbul, there are many good restaurants around. Daily Dana, Nusret(the salt bae guy, has a burger restaurant also), Black Angus, Burger Joint etc. There was even a burger festival few months ago.
Damn this burger looks glorious. I never thought of searing the insides of a burger after cutting it but I'm sure it adds an extra layer of deliciousness.
It's very usual in Turkey. I've seen it very often in burger restaurants in Turkey. The famous Turkish chef Nusret(AKA Salt bae) also serves his burgers like that in his restaurants. It results in the perfect balance between juicy interior and charred crispy exterior. Try it!
Once you're done with the burger marathon, I want to see you smoke some brisket for an authentic Texas barbecue recipe. My grandfather has an awesome recipe, so it'd be cool to see if you can make anything near his recipe!
I cook almost exclusively wild game as I have enough venison after every fall/winter to sustain our family for a year. I would love to see you do a wild red meat of some kind Greg and get your take.
Well Greg, you are either gonna get your first international infringement complaint (know you love that sort of thing ;), or are your on your way to ambassador extraordinaire and plenipotentiary!! Excellent cook, and that sideways char looks really awesome! I find it hard to believe you haven't hollowed your bread before...though I've never done it with a burger, often do it while constructing a large sub-type sandwich.
Boots Burger. It's the best one in Texas for what that's worth. Google em up. 100 yr seasoned cast iron meets home grown veggies and the homemade jalapeno relish is amazing. When you pull up it's a knee wobbling experience when that smell hits your nose. Prove me wrong Greg. Check em out for yourself. Best of the very best IMHO and I've not mentioned Del's Charcoal Burgers in Richardson TX. Open since 1957. Love these burger cooks!!

Great video sir! I dont know if you got a deep fried burger video but that would be interesting. I ate at Dyers in Memphis once years ago and it was quite a different take on a burger.
Dryers has interested me as well. I'll get it on the list... I was in Memphis a few years ago, before I ever heard of them. Of course, after I return home, I see them featured on one of the shows I watch!
