Boashi (Maldivian name for banana flower) / banana flower / banana blossom is prepared differently is different households of the Maldives. Some make it fried and crunchy, curry style and stir fried style. This is a stir fried version of banana flower.
Ingredients:
- 4 tbsp cooking oil
- 1 onion (medium)
- 4 garlic cloves
- 6 dried red chillies
- 1/4 of scotch bonnet chilli (according to your taste)
- 1/4 cup curry leaves
- 2 rampa pieces (3inch each)
- salt to taste (1/2tsp)
- 1 1/2 cup smoked tuna (sliced)
- 1 large banana flower (sliced)
- 1/4 tsp cumin powder
- 1/4 tsp pepper powder
- 1/2 tsp chilli powder
- 1 tbsp light soy sauce
Directions:
- Remove 2-3 outer bracts of the banana flower including florets inside. I discarded them as it tend to be little withered.
- In a large pot of water, add around 1 tsp salt and mix it.
- Thinly slice the banana flower into salt and water mix. Around halfway through you will see hard pistil of the banana flower coming out. Remove the whole section containing those pistil. Using the tip of your knife to pluck it and discard it. Continue removing and cutting pistil. I also did not use the middle of the banana flower once it was sliced halfway.
- If this is your first time slicing banana flower, it cabbe a little sticky. Don't worry you can clean your hands and knife as soon as you are done.
- Once slicing of banana flower is done, give a good mix with your hands, squeezing the sliced pieces in between your fingers. Squeeze excess water and remove it to a plate or strainer.
- slice onion thinly. Roughly chop the garlic, cut the dried red chillies in half. Thinly slice the smoked tuna.
- In a pot on low heat, add oil, sliced onion, garlic, curry leaves, fresh and dried chillies, rampa leaves, salt to taste and saute till onions are lightly browned.
- Once onions are lightly browned, add sliced smoked tuna, and stir fry it for 2-3 minutes.
- Now add the sliced boashi pieces, mix well. Total cooking time after adding the sliced banana flower is is 25-35 mins. Remember to give a stir every 4-5 mins.
- Close the lid and cook for 15 minutes. After 15 mins, add cumin powder, chilli powder, black pepper powder. Mix well and continue to cook for 10 mins.
- Add light soy sauce at the end and cook additional 5-10 mins.
- serve it with roshi / Maldivian flat bread / rice. I enjoy it rice, a little rihaakuru (Maldivian fish paste) and fried moringa leaves. I also like it with roshi.
