Ingredients:
- 2 ripe banana
- 2 eggs
- 1glass of milk
- 2 cup of all-purpose flour
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1/2 cup of sugar (optional)
- 1/2 cup oil
- 1 tbs vanilla essence
- some dry fruits (optional)
Instructions:
1. Mash the ripe banana in a mixing bowl until smooth.
2. Add the egg and milk to the mashed banana and whisk until well combined.
3. In a separate bowl, mix together the flour, baking powder, salt, and sugar (if using).
4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
5. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
6. Pour a portion of the batter onto the skillet to form pancakes of your desired size.
7. Cook until bubbles form on the surface of the pancake and the edges begin to look set, then flip and cook for another 1-2 minutes, or until golden brown.
8. Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
9. Serve the pancakes warm with your favorite toppings, such as maple syrup, sliced bananas, or chopped nuts. Enjoy!
