The more soft the batter, the more spongy you get. Without oven you can bake a cake. Just lit the stove and keep it sim. Then take and old chapati pan and place it on the stove. Take your cake tin with batter in it and put it on the pan. And don't forget to cover the cake tin with a lid. In 35 to 40 minutes tour cake will be done. No need of any pressure cooker or sand.
U can try the same in a kadhai... Just preheat your kadhai for 10 mins on medium flame and place a stand in the pan then place the cake tin on it... Cover with the lid abd bake it for 35-40 mins...

I made this cake and it tasted amazing. Only thing I had to change was cook at 180 degrees for 15mins more since at 160 degrees for 40 mins, cake was not cooked.

Cut and fold method is used for not over mixing the cake batter. If you over mix the batter, then the cake will be hard and not become moist and soft as you want. This happens because when you over mix the batter, the gluten in the flour will be released, making it hard and dense. You can use egg beater, but make sure that you mix it very gently, combining the ingredients in only one direction
