He is telling a hodge podge of two different stories, I believe. Brock Lesnar went to MMA and won some fights (I think), Stone Cold Steve Austin broke his neck in the ring but continued performing (albeit not very gracefully obviously). Might be misremembering though.

Brock was actually something like 5-3-1nc in MMA IIRC. He didn't exactly beat everybody, but he was UFC heavyweight champion for a while. Great takedowns and top control, , poor striking. Also popped for steroids in his last fight.

He landed on his head doing a shooting star press from the top rope...but I think he just got concussed. I think Stuart is mixing in the story of Kurt Angle, who won an Olympic gold medal in amateur wrestling while he had a broken neck. Brock did, however, kick some arse in UFC until a bowel problem put the brakes on his career. Then he went back again after a stint in wrestling, only to be caught with banned substances in his body, now he's in WWE again.

The bloke you were thinking of who went to MMA was Brock Lesner. Don't remember him breaking his neck, but he did become heavyweight champ. Went 4-3 in his original run.
