A super quick, ultra versatile, 3-ingredient, basic sambal or dried chili paste recipe, courtesy of Mom.
This chili paste is also known as as cili kisar and is a base ingredient for a lot of Malay dishes. I usually whip up a big batch and keep in the fridge so I always have some on hand. This can keep up to 2 weeks or so in the fridge.

ingredients:
- 20 Dried chilis
- 1 Red Onion/3 shallots
- 4 cloves of Garlic
- 1/2 cup of Water
or just guesstimate :D

Sambal recipe:
Technically this is not sambal - more like a chili paste base that can become sambal. To turn this into sambal you can eat:
1. Stirfry the dried chili paste in a pan with lots of oil under Low heat so the chilis don’t burn.
2. Once the chili paste turns a darker hue, and you see oil turn red, add salt and sugar to taste.
3. Et voila! Sambal that you can eat!

two weeks in the fridge, two months in the freezer is the official advice! I've kept it for longer though, as long as there's no mold and it doesnt smell off, I would still use it :D

Hi there. Oh yes I can related guesstimate 😁. However. long I can keep it in the fridge in a jar or do I need freeze it. Please adv. 🙏🏽🙏🏽

Hi yogi! you can keep this in the fridge for up to two weeks - depending on the water content, it might even be able to keep for longer. The boiling water process is meant to kill off bacteria. But of course, if it smells off or there is white mold, then please discard! If any longer than two weeks then I highly recommend storing in the freezer.

Hey Nomadette, thanks for sharing this. Noticed that you don’t remove the seeds of the dried chillis. Have you encountered the paste tasting bitter? I experienced that from time to time, and research seems to point to the seed. Puzzled 🧐

I personally have never had a bitter paste but yes, if your paste is bitter then the main cause are the seeds. I always adjust seasonings so that the final dish is never bitter, and as I cut the chillies into smaller pieces, some of the seeds will drop out anyway, so I dont bother completely removing it! too much effort! I use typical Asian dried spur or kashmiri chillies btw.

@@NomadettEats Thanks for the tip! I'm in Beijing now and the dried chilli they have are completely different form the ones i'm used to in SG, the same ones you use. I just made a batch of sambal belacan without removing the seeds. Thankfully it's not bitter!

these are typical Asian chillis, we use Spur or Kashmiri. BUT this can work with most dried chillies, so use what you have access to. for eg, dried fresno or serrano chillies
