Gâteau Basque is a true pleasure from the Pays Basque. It can be enjoyed stuffed with black cherry spread from Itxassou or pastry cream. The ''true'' gateau basque though is said to be made with both, black cherries and almond flavored pastry cream... Let's do it!

I'm french and i can tell you he's a very good chef, i'm from the basque region, "itxassou" is the village where my old family grow, the cherries are big and black, sweet with amazing flavour, and we eat the jam with the cheese. Thank you bruno to talk about the real France for people of other country!

So beautiful! I love your Basque cake from 2015 -- so yummy, I know because I made it myself! Also the Sable Breton from 2012, which always is perfect, and reminds me of these Basque cakes. (Your Canelés are still my all-time favorite.)

Good Morning Chef Bruno, thee are so many delicious and beautiful confectionaries from so many different countries around the world, I think the Basque Cake is my favourite without a doubt. I followed every step of the pastry cream, but it was comoletely runny..I chilled it even overnight in the fridge Does anyone know why that mightvr happened?
