My grandmother use to boil the garfish scales, dye them different colors and glue them together to make flowers. Never really ever had garfish any other way than fishcakes or gar balls.

That is what we call a spike bill,they make excellent gar balls .For something different make a red gravey with onion bell pepper and a lot of garlic,put a bunch of the balls in the gravey one simmer to your likening top with green onion serve over rice.
