That was the realest shit ever when the whole hog guy was talking about why he keeps that style. He'd rather not cook BBQ at all if he's not doing it in the method traditional to his family and home town. Living in the deep South myself, the stubbornness of people on other issues can be frustrating, but when it's applied to something like this: a craft honoring history and tradition, it can be so beautiful.

I watched this video almost every day for 6 months when I had Leukemia and was in the hospital 2 years ago. This video is really good and made me want to go to the US just to eat alot of BBQ.

I haven’t been able to go to France for 6 years hopefully I’ll be there in 2020 love the country so much. Lived in Marseille in 2009. We have great barbecue and Provence has great bouillabaisse.

Natives are the ones who pioneered it. Mexicans and blacks just copied them. The name “barbecue” comes from the native word “barbacoa” which is how the natives used to cook meat really slowly by digging a hole in the ground and covering it with cactus leaves. And it started in Texas that’s why it’s called Texas barbecue.

I am from Tennessee and I love all the people he meets. The second man is a true native Tennesseean and all the barbecue that he serves is lust like what you can find in Nashville and west. It is really cool.

Had the pleasure of happening upon Peg Leg Porker in Nashville last November. It was very crowded for good reason. It's truly fantastic BBQ. The ribs are fantastic!

Hearing amazing grace “how sweet the sound “ with that southern flare as you arrived with the fires burning almost moved me to tears. My grandfather would get up early start the fires wake my brother up and I for breakfast and either a fishing or hunting trip whenever we visited our grandparents for an extended visit from our hometown of DC. This clip really moved me to tears . There is something to be said about Mrs Helen style of cooking . It will have you crying not only from the smoke and heat index in the smoke room but from the soul and taste and feeling of the food itself . God bless you munchies for giving me a slight piece of my child hood those trips to my Nana and Papa house in the country! 🙌🏽🙌🏽🙌🏽

I'm from West Tennessee, born and raised, and this video made me missed home, and Tennessee BBQ. Moved to Georgia a while back and the BBQ isn't the same. BBQ is such a big part of West TN culture, especially in the Black Community. There was always a BBQ option in most mom and pop restaurants. If you couldn't make up your mind on what to eat BBQ would be the next option since it was always ready. Every time we go visit family we make sure to bring back loads of BBQ with us. It also made me realize that i missed TN heavy accents. lol

Great video! What I love the most is that every person at every stop is cordial and proud of what they do yet they know other flavors and processes exist. They love what they do and want to share it with the world. And I am quite Happy to give them my money for some great BBQ. Chicago out!

WOW! I want to do this exact road trip now! Wouldn't mind showing up at Helen's with a flask of whisky and watch and listen quietly in the corner. These are my people just in the sense that I have lived in the south my entire life and I am proud that they are my people. Hardworking honest pork lovers.

Well, they don't give credit because it really isn't true, the spanish and the Indians coined the term for cooking over green wood called barbacoa, here, this from the Smithsonian: The first indigenous tribes Christopher Columbus encountered on the island he named Hispaniola had developed a unique method for cooking meat over an indirect flame, created using green wood to keep the food (and wood) from burning. Reports indicate that the Spanish referred to this new style of cooking as barbacoa: the original barbecue. As the Spanish explorers who followed Columbus turned their expeditions north, they brought the cooking technique with them. In 1540, close to present-day Tupelo, Mississippi, the Chicksaw tribe, in the presence of explorer Hernando de Soto, cooked a feast of pork over the barbacoa. Eventually, the technique made its way to the colonies, traveling as far north as Virginia. Chris columbus did indeed discover america, of course everybody knew once he arrived that they weren't the first on the land, the king of spain knew it, the sailors knew it, however he did discover it, because the Indians didn't know where they were, didn't know what the world looked like, they had no context--the vikings were in america before columbus yet they didn't discover it, why? Because they didn't place it in context. Context. Placement in the big picture...that's discovery.

Friend, you should have traveled the whole state. Tennessee is a melting pot of different styles. I grew up East of Nashville in Mt. Juliet. The Masonic Lodge BBQed every Independence Day as a fund raiser. We cooked shoulders over hickory coals. Covered with cardboard. Stabbed the meat with long knifes and rubbed salt into the cuts and on the surface. About 18 hours on the pit. Different sauces different years. Sometimes vinegar based, sometimes ketchup based. One year we even had a crazy black sauce with fine-chopped onions in it. I believe that’s a Kentucky thing.

Damn, they know how to cook meat in Tennessee! I'm from the UK and where I live, there just isn't anything this good. I can tell you that without even tasting it!
