Gar can be delicious or they can make you very sick! You guys taught me about the latter after my first attempt to eat one of these fish. Luckily, it wasn't a female loaded with eggs. Females take around six years to mature to the point where they can make eggs, so my first gar wasn't necessarily a male. It could've been a young female. But, BOY was it tasty!
After I cooked the fish you see in this video, it was a lot chewier than the last one. Either I overcooked it, or this technique of removing the fillets leaves more of the white, stringy sinew, or the bigger gars just don't taste as good as the small ones. I would put money on the bigger ones not being as tender. I mean, it was good. Just not as amazing as the first gar I cooked.
If you ever get the chance to eat a gar, try one! I think you'll like it.

20 or 30yrs ago i read an article in field and stream about how to do gar. they said to cut along his back peal it open and use a butter scoup its small like an ice cream scoup. and use it to scoup out the back filets in a ball form . bread and fry . it was called gar balls.said the taste was better than many other fish.

`Yeah, if you enjoy eating fish, you must go fishing at least once. If you don't like fish, go anyway, you can catch and release. Relaxing and exciting at the same time.

Just tried my first gar today. (used this video on how to fillet it out). Found it tasty, more "wild" than catfish, similar to how venison is to beef. I bet it will be good smoked and canned, so I'll let you know how it goes.

Pruning shears for cutting the skin works pretty well. The smaller one handers like you would use to cut a 🌹

Your right the bigger ones aren’t tender. I’ve caught and cooked multiple giant gar. Sure you get a lot of meat but it’s not worth the trouble to clean etc just to have tough meat. Fun to catch though. The 2-3 footers are the best eaters!

One time ago, a neighbor across the street from where I live rent fishing. He came back from fishing and caught lots of fish. He gave me six gars from the catch and I thank him a lot. I took the gars in the back yard and put them on the picnic bench and cleaned them very carefully. And removed the guts from the fish and used a meat clever and hit them on the back all at once the fish popped out of it's hard armed shell. After doing that I cut the fish into steaks and fillets put them in a big pot soaked them in saltwater over night and the next day rinsed them off batter up fried hot oil onions in it. Man oh man. They taste like chicken and pork chops together.

According to Wikipedia, the toxin is "denatured" (destroyed) when cooked above 250F. The snips are probably fine. Clean them well, and lube them with lanolin oil/grease or any food safe grease.

I used a three pointed frog gig with a rope tied to it and speared them. Works surprisingly well

love eating alligator gar, i cought a lot of them, the way youre doing it is the best way to do it. theyre the second largest game fish in north america so be proud of that. cut the fillets into cubes and fry em no batter, just seasoning and it comes out great, wouldnt recommend baking or grilling . 2ft and under id throw back, not worth the effort. 6 & 7ft gar are not uncommon just be careful cause they release oil when theyre scared and it makes them slippery not poisonous but it throws you off guard if youre not expecting it lol

Northern Pike are similar taste-wise, imho. The younger smaller ones are delicious, but the big have a poorer texture and flavor. Not really a bad thing though, since large Pike have far higher levels of heavy metals and other accumulative toxins.

you can easily get 40lbs of meat off a larger fish that one is about 5lbs of meat or somewhere near there

We originally found your channel through the video of you mounting your outboard on the Kayak. The kids really like the adventures in the Mangroves, and on the Island with the broken Bridge. If you look back at his previous gar video that gar is the perfect size. Any bigger I don’t keep. Most of the time that size doesn’t carry eggs or is a male & the flavor is so much better. Like a really flakey chicken breast. The big ones will turn you off from trying it again for a whiiiiile lol. They’re no good.

I like gar I usually make gar cakes out of it boiling the meat like crab or crawfish and then mixing it with seasoning and bread crumbs and frying it Thanks for sharing they can be a pain to clean 👍👍

My daddy taught to us a few inches of a cotton mop head run bailing wire around middle of length and make a loop to hook up fishing line , brush the mop to make it fuzzy. Add split shot above it for throwing weight and jerking on retrieve. The fibers get Tangled in teeth but you can shake them off , fun to catch ,never ate one might try

Instead of tin snips, use a grinder with a cutting wheel. It work really well, it's alot easier BUT it smells terrible. Because the cutting wheel doesn't cut but instead burns it's way through. Doesn't hurt the meat at all.

I was told never to kill or eat this fish. In fact I've lived on the Mississippi gulf coast for years and never eaten gar or seen anyone eat it.

and now you know better. the only part of the fish that is toxic is the roe, and even then, the toxin breaks down if you cook it to over 120f.

Using metal snips is how I learned to clean gar in Louisiana...except instead of sawing behind the head we just laid the gar on the ground and used an ax, then snips down the top of the back. I didn't know about the toxic stuff by eggs though

I have fished around and caught gar my whole life and never ate a gar. Some people eat them but usually made what they called Gar Balls. We always just through them out as they were always considered trash fish. We have them on every lake in Louisiana, Mississippi and Texas where I have lived and fished. Some of them up to 8 feet in length. Interesting to see how to clean them.

Just shot one last night bow fishing and fried some up on butter and old bay. Definitely not trash fish. It’s tasty white meat.

I'm surprised you didn't use the PVC method. That is when you attach a pieces of PVC to the cleaning table and stick the gar's head into the PVC to hold it in place. Other people just drive a nail through the head and into the table. As for the eggs, they are not poisonous to other fish and are an old Florida trick for catching catfish. The skin is also of value. Each portion of the gar's hide has different shaped armor plates. Some look like arrowheads, tropical fish, etc. Some use the plates for arrowheads. Jewelry makers make earrings. Some clean the fish, starting at the belly, so they can tan the entire hides. My buddy is a knifemaker and he'll take the hides and make knife sheaths for the knives. Bigger gar have more intermuscular sinew. Grinding the meat is common. This is why gar balls are common. You can also smoke them and make a dip.

Try the northern snakehead if you get a chance. They are the best tasting fish in the potomac river. I believe there are some in florida and other southeast states as well. Its an invasive species so if you catch one, its illegal to release. More reason to fry em up. Hope to come down and fish with you in the future.

the only hard part is the skin, the fillets have no bones, and the fish itself has big bones not tiny bones so you can see them pretty easy

If you take the skin and cut it into 1-2 inch wide strips you can dry it out and it is a pretty sweet dog treat.

We been gigging gar for years an we use a chop saw. busted through many a egg sacks an have never gotten sick.not saying you can't, but I'd think after 10 yrs we would've. We use the eggs for fishing . I sometimes do it almost the same way you are except the belly also has 2 big chunks of just yummy boneless goodness.we deep fry ours like gator tail.

Like you I was told that the eggs could be toxic, therefore I've never attempted to filet one. Most of the time, I just cut my line and let the toothy critter go on his way. It was interesting watching you though, thanks.

Garr are an ancient fish, dating back to the time of the dinosaurs. I've never eaten them, but they are my favourite fish

We use a sawzall. Cut every 8inches. Wash off. Pull entrails and eggs fillet meat out like a grapefruit. Side note: my chickens ate the eggs... I'll update later. Gar was 10+ lbs

The belly meat is also just as good to eat just fillet silver skin off inside of fillet you them can gut wash use meat cleaver to cut remaining body into 4 to 6” Sections the meat left on those bones is very good can be battered and deep-fried nothing needs to go to waste

@@Deadtileyedie it's definitely one of the fish I do keep and clean and enjoy it. When I have a fish fry I will toss in gar meat and most the people don't have a clue what there eating 😂 golden lol.

That’s how I filet mine ! I got 2 I still have to filet . They are super tough it get through that armor !!

I usea machete and start on the back fin and chop it all the way across untill i reach the base of the head and then proceed to filet it like u did, a smaller knife always worked better in my opinion

A machete and a pair of vice grips and about 10 minutes your done. I used to do it the same way you did, but there are some awesome video's on here that can show you the Cajun way and it is easy and fast
