Presenting the most requested recipe, the Queen of Goan Desserts - Bebinca (also called Bebik).
The key ingredient when baking Bebinca is patience. It is indeed a true labour of love. Make two separate batters (one dark and light), pour a thin layer of one batter, lather melted ghee on top, bake and then repeat, alternating between the dark and light layers.
Bebincas are traditionally baked in earthenware ovens but unlike other baked desserts, these are not baked over fire but by placing a few burning coconut husks over the lid.
We were lucky to get it right in our first attempt itself a few years back. Sharing all our tips & tricks to get your perfect Bebinca. Do give it a try, we are sure you'll would love it.
Ingredients:
750 ml (3 cups) coconut milk
12 egg yolks
200 g maida
300 g powdered sugar
1.5 tsp powdered/grated nutmeg
1/4 tsp salt
60 g ghee or as required
For the caramel sauce:
1/4 cup sugar
1/2 cup water (1 tbsp + 7 tbsp)
