I'm a big fan of using the whole animal when cooking, the nose-to-tail philosophy. I'm also a fan of trying to use what you have around you. What better way to show this than making a delicious Beef ❤️ Heart Tartare with self-picked Ramsons (wild garlic). Beef heart is a cut of meat that is really cheap, has tons of flavour and it's the leanest muscle on the animal. It's also extremely versatile, you can make Korean-, Japanese-, Italian- or French style, or any other style you can think of 😉 Give it a try, your wallet, tastebuds and health will thank you 👌

I totally agree with your philosophy that one can eat most parts of an animal. It is scary to see how people refuse offals and other cuts in especially Scandinavia, the US and England and the good stuff goes to dog food or is simply thrown away. In other parts of the world, Asia, Africa, South America etc these cuts are popular. In Romania too, and very cheap.

In my experience heart is extremely loaded with blood and after defrosting it and slicing it up for whatever dish I’m making, I like to soak it in water or a brine. Is that unnecessary?

Hi Nicola, I have to admit that I have not have that issue. The hearts I get from my butcher have no excess blood in them, so for me it’s unnecessary. But mileage may vary depending on the product you can get. I would not brine it for tartare though.

They’re always fresh, but I always have to order them, they normally don’t have heart.
