In order, I think these are the ingredients. Pigs heart Shallots Coriander The sauce is made up of Anchovies ,Smooth dijon mustard and Capers. a crack of Pepper Worcestershire sauce To plate up Mayo? A bed of water cress or chia Egg yolk Sprinkle of Maldon sea salt Extra virgin Olive oil Balsamic vinegar Another crack of pepper Edible florals French stick ? Or maybe a ciabatta? :D

I cure my egg yolks instead, adds texture and flavor. And I plate mine over a thin base of salty pâte sablée (I plan to experiment with orange zest in the pastry)
