You could use soy sauce as substitute, but less than 1:1 ratio, because the soy sauce is a little saltier than oyster sauce, and oyster sauce is a little sweeter than soy sauce. And add a bit of sugar.
Yes you can I do it all the time and I use rice vinegar if I don’t have rice, wine, teriyaki sauce for the oyster sauce if I don’t have it sesame seed oil, garlic oil sometimes when I don’t have something, I substitute it and it still come out good but you can use flour for cornstarch

If you do just velvet your cubes with baking soda. Dust lightly with the baking soda, leave for an hour or less, rinse in cold water, dry and then proceed.
