We would think so. You will have to modify the salt to meat ratio a little, and you won't need the papaya paste. If you are in Calcutta go to New Market and ask for a small chicken for chaap. The chicken should be preferably less than 800 g after removing feathers, skin and guts. Cut it into four pieces (two breasts and two legs) and then follow the recipe. Reduce the cooking time too since chicken cooks much faster.

I live in the US now and if it wasn't for this channel, my connection to the food I grew up loving would have long been erased. It is so hard getting food like this in Indian restaurants in Midwestern US. Every single time I have cooked one of your recipes in my apartment, my American roommates have been bowled over. They have tried the recipes themselves and have developed a new love for and interest in cooking Indian and more specifically classic home style Bengali dishes. And that cultural exchange, that enlightenment, is the true purpose of great food. Thank you for this.

This is the first time I saw in the video all the ingredients that my mom used to make chap and this is the authentic method of having the chap made, I've also seen other videos but they did not use these ingredients or they have diff style. am 💯 percent sure this is gonna be tasty cause it's my mom ingredients and thank you for your video cause I always forget one or two ingredients while making. ami toader sob videos dekhi and i have tried many of them.. kaal amar friends ra asachilo and i made mishti polao and chicken chaap(inspared by bief chaap) all of them loved it and that was my very first attempt of cooking both of the dishes... thank u saptarshi da and insia di for everything that u have shared with us and keep loving the kolkata cuisine... and If u allow me i would like to share a traditional recipe of my family with mutton....

great receipe once again, one suggestion (you can add dried rose petal and kabab chini in the biryani masala) it enhances the taste....I followed ur receipie with my biryani/chaap masala...turned out really great...one more suggestion instead of raw onion paste with cashew & posto paste, try with boiled onion or beresta paste, tastes even better, let me know how was it once you try with these changes, would wait to hear from you....keep posting....

This is the most difficult thing I have ever watched in the middle of the night. I am now SO hungry. There is a place near Baruipur railway station called Asma Hotel. The beef chaap keeps on heating in display. Absoloutely loved the smell of that. Your delicious recipe combined with the smell ingrained in me made for a perfect evening.

I love the way you guys present the cooking process without any commentary in the background or even showing anyone's face, yet very effective in explaining the process and ingredients. One point on this recipe though - I was born and brought up in Kolkata and now I keep going back once a year at least. Like most Bongs, I am a hard core fan of Biriyani and Chaap. I am yet to see a boneless chaap served in the traditional Muglai restaurants.
Thank you, Deb. As far as we have seen beef chaap in Calcutta is boneless. Mutton chaap on the other hand is made from actual mutton "chop" which is beaten and flattened along with the bones.
