Beef, chicken Enchiladas & crockpot enchilada casserole

Beef Enchiladas
Ingredients:
2 lbs Ground Beef
1 Tbsp Olive Oil
1 medium Onion
4 cloves or 2-3 tsp Garlic
1 can Red Enchilada Sauce or Green
1 tsp Ground Cumin
1(15 oz) can Pinto Beans, I didn’t use beans
1(4 oz) can Green Chilies diced
1 tsp each Salt and Pepper to taste
Flour or Corn Tortillas as many as you can with ingredients.
3 Cups Mozzarella and cheddar cheese
Topping: fresh cilantro, chopped red onion, diced avocado, sour cream or anything you want.
Instructions:
Put oil in pan and sauce the onions and garlic for a few minutes then add the ground beef and cumin, cook until browned.
Stir in beans(if using) and green chilies. Add salt and pepper, stir everything together.
Heat oven to 350 degrees Fahrenheit.
If using corn tortillas put some oil in small skillet and place 1 tortilla at a time to hot oil only enough to soften them so maybe 8-10 seconds per side and put on plate with paper towel to soak up extra oil. Flour tortillas I microwave for about 15 seconds so they don’t tear when you roll them.
Take a tortilla place between 1/4-1/2cup of the meat mixture and put in tortilla top with a little mozzarella cheese and roll. Continue until your pan is full. I use 9 x 13 pan. Once pan is full pour enchilada sauce on top and then add your cheddar and mozzarella cheese to the top and bake at 350 for 20 minutes and enjoy!
Chicken Enchiladas
Ingredients:
3 lbs of Chicken breast( boneless, skinless)
2 Tbsp Oil
1 medium Onion
1(4 oz) can Diced Green chilies
1 tsp each Salt and Pepper
1(15 oz) can Black Beans( optional) rinsed and drained
Flour or Corn Tortillas
16 oz Cheddar cheese
16 oz Mozzarella cheese
1 can Red or Green Enchilada sauce
Topping: cilantro, avocado, sour cream, red onion
Instructions:
Add oil to skillet and sauté onions and garlic for a few minutes, then add the chicken and green chilies and season with salt and pepper. Cook until the chicken is done 8-10 minutes. Add beans ( optional).
Remove from heat.
If using corn tortillas cook in some oil just 8-10 seconds on each side. Flour tortillas I warm in the microwave about 15 seconds just to warm.
Take a tortilla and add about 1/4-1/2 cup of the chicken mixture and add a little mozzarella cheese and roll it up continue this until your dish is full. I use a 9x13” casserole dish.
Pour enchilada sauce on top and then add your cheddar and mozzarella cheese to top.
Bake at 350 for 20 minutes or until cheese is melted. Enjoy!!
Slow cooker Enchilada Casserole
Ingredients:
2 lbs Ground Beef
1 medium Onion, diced
2 tsp Minced Garlic
2 cans Cream of Mushroom Soup
1 can Petite diced tomatoes
1 can Green Enchilada Sauce
1 bag tortilla chips
1 can Black Olives
8 oz Cheddar cheese
8 oz Mozzarella cheese
Instructions:
Brown ground beef with onions and garlic.
Once browned drain grease. Add green chilies, salt and pepper. Add cream of mushroom soup and diced tomatoes. Mix well and simmer on low for about 5 minutes.
Spray crockpot with cooking spray and on the bottom cover the bottom with some crushed up tortilla chips. Add meat mixture to crockpot and top with enchilada sauce,cheeses and black olives. Turn slow cooker to low and cook for 4-6 hours. Enjoy!!
