These are so good!! I am going to make some more without the chocolate chips soon.
Granola Bars
Ingredients:
2 1/2 C. Old Fashioned Oats
1/2 C. Whole Almonds, coarsely chopped
1/3 C. Pure Honey
1/4 C. Unsalted Butter, cut into pieces
1/4 C. Packed Light Brown Sugar
1/3 tsp Vanilla Extract
1:4 tsp Fine Sea Salt
1/2 C. Dried Cranberries, coarsely chopped
1/4 C.+2 Tbsp Mini Chocolate Chips
Instructions:
Toast oats and Nuts:
Heat oven to 350 degrees F. Line the bottom and sides of an 8” or 9” square pan with aluminum foil or parchment paper.
Add the oats and nuts to baking sheet and bake for 5 minutes, stirring and then bake another 3-5 minutes or until lightly toasted. Transfer to a large bowl.
Make Bars:
Combine the butter, honey, brown sugar, vanilla extract and salt in a small saucepan over medium heat. Cook, stirring occasionally until butter melts, mixture is bubbling and the sugar completely dissolves.
Pour the butter mixture into the bowl with the toasted oats and almonds. Mix well. Let cool about 5 minutes, and then add the cranberries and 1/4 cup of the mini chocolate chips. Stir to combine. Some of the chocolate chips will melt and act as glue to help hold the bars together.
Transfer the oat mixture to the prepared pan, and then use a rubber spatula or damp finger tips to firmly press the mixture into the pan. Press pretty hard to help the bars stay together. Add remaining chocolate chips to the top of bars and press them in firmly. Once cooled, cover and refrigerate for at least 2 hours or freeze for 30 minutes. Remove the granola bars from the fridge and cut into 12 bars.
Storing bars:
Store in air tight container for up to 1 week. For softer bars, keep at room temperature. For slightly harder bars, store in fridge. Bars will keep in the freezer for up to 3 months when wrapped well.
