Randy, you can marinate the beef for 24 hours (up to 36 pwede) then kung hindi mo pa lulutuin, ifreeze mo kasama yung pinagbabaran, up to a month or 2 pwede yan mag-last, basta ibalot mo lang mabuti para di magkaroon ng freezer burn. :)
for this vinegar, kasi this is the traditional tapa kaya vinegar is used. Yung favorite na tapa ng mga anak namin is a different one using calamansi :)

Hi Joplin, there are a lot of different recipes for tapa, I personally have two, this one, and a simpler version that my husband and kids prefer. This is the more traditional tapa. Happy to know that your husband liked it. :)
Hi ate, ive never made beef tapa before and i dont remember eating it growing up. And i never order it when dining out. Ive checked so many recipes and others only require little sugar or nothing at all. Some only with soy sauce and garlic or no vinegar. Ive only decided to make it coz my husband loves his grandma's tapa but since she passed he doesnt know how she makes it and how it tastes like coz was a long time ago since he had some. I followed your recipe though and he liked it.
@sanzoparty1066 yes, there are a lot of versions of tapa, I personally have 2, this is the sweet or traditional tapa, I also have another one which is not sweet at all. This version is what my family likes. :)
I really like this informative video. I do have a question. I have seen the marinade recipe without soy sauce and sugar. People would salt and pepper the beef liberally and then put inside a ziplock bag. Then they add the vinegar and garlic. Are there other versions of "tapa"?
