May I ask what type of bean sauce used in this recipe? I've found a wide range of bean sauce, not sure which type's the correct one.

It's a Chinese Bean Sauce and it'll literally just say that on the bottle. Just go down the aisle of a Asian or Chinese market where all the bottled sauces are and look for "Bean Sauce". It's like a dark brown paste. Don't listen to "G Mail" below. If you want to "thicken" a sauce, you'd use a corn starch slurry.

I would just throw them in once all of the seasonings and spices have been added to the tripe. Let both the tripe and tendons braise together for a few hours or throw them in a pressure cooker for faster cooking.

the cook did not mentionwhat spice it was the white colored small long pinted he threw in after the cloves and also i cant understand what he means by house pread pin sauce? its confusing. can you print your spices and ingredients clearly if you really want us to learn.

Evangeline Lim he said house bean sauce. You can easily get that at Asian grocery stores.

salmonfire Sliced licorice root. I'd think it's redundant, given that star anise also imparts a licorice-like flavor to the dish.

Chinese licorice, it's used in many recipes as well as in southern chinese beef noodle soups. It has a medicinal flavor to it lol, I dont expect anyone to recognize it, probably can grab some at the asian supermarket.

Ugh yea, it's dehydrated orange peel that you buy from a Chinese store. You just throw it in and it'll rehydrate while braising.
