Beet Salad with Maple Dijon Dressing.

Maple dijon dressing:
1/4 cup pure maple syrup
2 T white wine vinegar
1T dijon mustard
1 clove garlic, minced fine
1/2 cup olive oil
salt and pepper to taste
I think that pickled beets would work really well with this recipe but I wanted to show this using just cooked beets.
