I don't care for salad, but I would have eaten that. Not only did it look so good (like Lish said, you eat with your eyes first), Lish's excitement when she makes and tries anything makes the dish that much more appealing.

Lish, I’m so grateful for your video! I’m not a chef, I just cook a lot and have an appreciation for tasty and healthy dishes. I made this dressing using avocado oil and promise it taste like I was in a five star restaurant! Hands down the best vinaigrette I’ve ever made! Now I have to have a dinner party so I can spread the love!

Honestly this was super easy and simple, if you skip the more "fancy' stuff like the champagne and the blue cheese and the different kinds of greens it's just lettuce, oil, vinegar, salt and some onion, nothing that you won't find in any semi competent pantry. It's not about the ingredients, it's the technique that made this salad a bit more interesting and less sad than a normal home made salad, I'm definitely going to try this!

@@cwg73160 of course not, and i wouldn't; i was asking for more salad recipes, as i eat salad twice a day and learning more great recipes like this one in the video would be lovely and helpful to enhance the ones i make. I did read it aloud, and that's what felt right for me to say. I said "not to be weird," because it's just something i say sometimes if it feels right in a casual, kidding-around way. Nothing i said was harmful, toxic, or mean, let's let everyone be themselves as long as it's cordial and in keeping with maintaining a safe space under these nice videos. Im not going to read anymore of your comments, this isn't healthy.

Watching Chef Lish compose this dish made this non-salad person love greens. The combination of crunch, creamy/briny blue cheese, and acidity of the dressing was perfection! I am happily eating this salad a few times a week. I love serving it along with Buckwheat Galettes for a quick weeknight dinner. Satisfying and comes together quickly!

This is lovely. But I must say as a customer I would be irritated by such large pieces of lettuce. I’m a firm believer in everything in a salad being bite-sized.

Oh no! I respectfully disagree! If you tear them into bite size pieces, it affects the flavor. Keep them whole until you cut into them. Flavor is better.

I would have liked tips about how restaurants wash and store greens. The salads I make at home are always too wet, but drying greens thoroughly can cause bruising.

Have you tried a salad spinner? You should be able to get most of the water out without the leaves getting too smooshed

So similar to the salad that we make at home, one can add some fruits too in this, like grapes or green apple. It gives a lovely burst of sweetness

I know people are saying they want tips on washing the greens, but she wasn't really "washing" the onion here so much as soaking it to remove the strong taste and acidity. It's a good trick to know if you aren't a fan of raw onions!

I love champagne vinegar as well, or white balsamic in a pinch; great recipe! 😋 ❤ Fun fact, that’s pronounced on deev, the endive pronounced in dive is a curly green usually found in mixed salads. I just learned that and had to share lol 😂

How do you wash and dry the greens properly? I use a salad spinner but I find that the greens are still wet even after a couple of spins.

Don't crowd the spinner. If you're using a lot of different salad leaves, wash and spin them separately.

LOVED this....you are spot on about the shallots. I had never rinsed nor dried and this is HUGE! I added a dollop of dijon and I used a stick blender..... and it emulsified for days. I also added a bit of sugar; a balance to the vinegars I used. EXCELLENT for the third day in a row....

epicurious i hope u notice my comment 😭🙏 please please pleasee make cooking vids for ramadan since its ramadan soon or yk make foods that dont contain alcohol/pork. I love your vids but it's hard to try to recreate them bc some are using alcohol/pork in their recipe and it's hard to find the replacement/alternative ingredients for that 😭

She used champagne VINEGAR in this recipe , no alcohol in vinegar ! If there's a recipe you like of hers that has pork products, substitute them with tempeh ( fermented & cultured soybean) or an animal protein you can eat !

That vinaigrette was awesome for a potato salad. However, I never understood the French way of making salad. For me one cannot make a good salad if one does not make the vegetables release juices to mix with the oil.

Chefs always say a salad should be eaten from a plate. I find it more fun to corral that lettuce in a large bowl, like a pasta bowl. Maybe I’m a slob 😋

Great salad, reminds me of an old Jamie Oliver video. I think it's also important to mention that you need to dry lettuce after washing! Many people put wet lettuce in the bowl and then complain about watery salad…

When I make salads, I cut the greens into bite-sized pieces because I don't like cutting greens before I eat them. Especially when there's dressing on the salad, the greens get slippery and are difficult to cut.

One day I wanna see a chef grab a tablespoon and actually measure how many tablespoons they just poured in right after they said "3 tablespoons" ^_^ Edit: and to anyone bragging or trying to give cooking advice below - don't... 😅 i'm just taking a piss out of pro chefs having a terrible idea of how much a tablespoon is. Gordon Ramsey is probably the worst at this xd

after a while you get a feeling for that. Most people who eyeball think/cook professionell are pretty close to it. Also it's more important how it tastes you can always add again ;) And as extra excuse: There are plenty of various tablespoons, so they can just say: Well I had a different spoon in my mind, in which it would've been 3 :p

An excellent presentation, Thanks Chef. Love the inclusion of shallots; not used enough in American cooking. But: What does this salad taste of? Salt. Gobs in the dressing, more on the greens then we use multi layers of Danish Blue? What happened to letting the flavour of the greens shine?

My problem with such salads is that when I see it I think "oh no, this will be such a hassle to actually eat" And then when it's done you didn't even have a proper meal yet but your plate and your surroundings are covered in dressing. I prefer salads that sit on the fork nicely and don't require pushing the greens into mouth by force.

The lettuce needs breaking up. What I don't like about restaurant salads is that you have to cut it up after it is served. I make very good salads with a bit more ingredients. Saying that, these ingredients do go well together.

If it was cut before it would water down everything and make it soggy, lettuce is mostly water. Babies are the only people who need their food pre cut
