Ohh my goodness! This is exactly what I needed to know so I can start making cheeses for my family. We love the goat cheese but rarely have enough milk to do it. Now that we finally have a milk cow, I can’t wait for her to calve so I can start making some hard cheeses and butter. We spend a ton of money on these items.
Your comment about using yogurt whey instead of the freeze dried cultures is game changing for me. I make about 2 gallons of yogurt a week and I always greek it so I have so much whey all the time. Now to refine my hard cheese making skills.
I just joined a cheese group and got David and a couple other books. I was literally looking at the cost of cultures online and knowing i can use whey makes me even more excited

Just requested the 200 easy recipes before the video was even over 😂 Thank you for the secret to getting rid of the smell! I strain my yogurt to make it thick and I hate when the fabric gets funky smelling. I’m still in the waiting stage for the dairy cow at the moment. 7 months pregnant with baby 4 is slowing my decision making down a bit. We have our fencing and a cow lined up as soon as we’re ready. Just have to build a run in and milking area.
There was an old RU-vid channel called Pioneer Sarah. She totally disappeared and took all of her videos off. But I remember that she had a cheese making video, and she said that you can use ocean water! I've never tried it, but she also said you can use lemon juice and that is how I made all my goat farmer's cheese.
I have an old cast iron press! It has several different weights, do you think it would work? I'm sure it was used for fruit,cheese and lard back in the day.
I was watching and trying to figure out if you mentioned where to get the cheese press that you use. I have 8 year old twins running around and as soon as they sense that I am doing something important, here they come!
Can I use vinegar instead of citric acid? I've seen many others use vinegar but am unsure what that purpose serves in terms of cultures, citric acid, or rennet.
