Thank you for this! The book which really got me started in this is Irene Brady's Illustrating Nature. It's more geared towards becoming a nature illustrator but she includes examples of nature sketchbooks too. Country Diary of an Edwardian Lady is one of the early ones and has been very influential (in the UK at least), but not a 'how to' book.
