LAHORI STYLE CHOLE - What's a Sunday morning without some good old Chole - Chana with Rice or Hot Roti .
LAHORI STYLE CHOLE
Preparation time 10 minutes
Cooking time 30-40 minutes
Serve 4-5
Ingredients
For Cooking Chole
¼ cup Ghee, घी
½ inch Ginger (peeled & roughly sliced) अदरक
1 no. Green chili (less spicy & roughly chopped) हरी मिर्च
2 no. Garlic cloves, roughly sliced, लहसुन
½ kg Chickpeas (soaked for overnight) भिगोए हुए छोले
Salt to taste, नमक स्वादअनुसार
¼ cup Ghee, घी
Water as required, पानी
2 no. Black cardamom, बड़ी इलायची
7-8 no. Black peppercorns, काली मिर्च के दाने
For Masala
2 tbsp Black peppercorns, काली मिर्च के दाने
5 no. Black cardamom, बड़ी इलायची
1 heaped tbsp Dry fenugreek leaves, कसूरी मेथी
For Ginger Garlic Paste
3 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
1 inch Ginger (peeled & roughly sliced) अदरक
1 tbsp Tender Coriander stem, roughly chopped, धनिये के डंठल
7-8 no. Garlic cloves,लहसुन
For Onion Paste
2 no. medium Onions, roughly diced, प्याज
For Lahori Chole
2 tbsp Ghee, घी
2-3 tbsp Oil, तेल
1 no. dry Red chili, सूखी लाल मिर्च
¼ tsp Coriander seeds, धनिये के बीज
¼ tsp Cumin seeds, जीरा
Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
Prepared onion paste, तैयार किया हुआ प्याज का पेस्ट
2 heaped tbsp Coriander powder, धनिया पाउडर
1 ½ tsp Turmeric powder, हल्दी पाउडर
¼ cup fresh Tomato puree, ताज़ा टमाटर की प्यूरी
1 cup Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
Cooked chole, पके हुए छोले
Remaining cooked chole, mashed, बचे हुए पके हुए छोले
1 tsp Sugar, चीनी
2-3 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
2 heaped tbsp Prepared masala, तैयार किया हुआ मसाला
For Garnish
Ghee, घी
Tomato, wedge, टमाटर
Green chili, slit into middle, हरी मिर्च
Coriander sprig, धनिया पत्ता
Ginger, julienned, अदरक के लच्छे
Lemon, wedge, नींबू की फांक
Process
For Cooking Chole
● In a pressure cooker, add ghee, once it's hot, add ginger, green chillies, garlic and saute it for a minute.
● Add chickpeas, salt to taste, ghee, water as required, black cardamom, black peppercorns and mix it well.
● Cover it with a lid and give it 3-4 whistles until cooked well on medium flames.
● Leave it aside for 8-10 minutes to depressurise the cooker.
● Divide the cooked chole into two separate bowls and keep it aside for further use.
