after dipping the strawberries do you refrigerate them to set before decorating? or decorate as soon as your done dipping

You are truly amazing I came across your videos sometime last year, and I love all you do 💕💕. I'm ordering your ebook and look forward to receiving it. May I ask about cutting the floral foam? I am having a hard time getting pass the sound, and feel of cutting it, it's that same feeling of scratching a blackboard with your nails the sound, and feel is awful, so not sure if all foam is the same, or if the wet type of foam is different from the dry? Help! 😊

Hey there 👋 Thank you!! Yeah i know what you're saying with the sound and feel. I find the wet style foam is definitely better than the dry oasis or polystyrene foam though 😉

Good question, its called the 50/50 method and is perfect for strawberries so there is no 'snap' with chocolate breaking off the strawberry. Explained fully in my other videos like '5 most common mistakes'.

On one of your previous videos, I noticed that you said that the best chocolate temperature for dipping is approximately 83°F? Is that correct? I did pretzel dipping last night and my chocolate was microwaved which maybe I should not have done. However, it was 130°F and was still not thin enough. I mean it still worked but the chocolate was a bit too thick for my personal taste, I got thinking that 83°F sounds very low. How is the chocolate thin enough at that temp? Love love your videos!

Hey there, yes 84°F for white or milk and 87°F for dark. 130°F is borderline burnt and it will thicken if too hot. Most likely you are using a compound chocolate like melts which is fine but you may need to add some coconut oil to increase the fluidity. The cocoa butter in the callebaut callets is how i achieve good fluidity 😉 For more info with simple steps for beginners you can download my ebook at pipeitshop.com

Bubbles are usually incorporated into the chocolate if stirring vigorously. You just need to stir gently and tap the bowl, with fluid chocolate the bubbles will rise to the top and can be removed.

Hola pipe soy de Ecuador y he visto tus vídeos y son bellas esas fresas . Y también realice tu metodo 50/50 pero mi hermana me dice que no estan crocantes no se si estoy haciendo bien yo uso el chocolate real y el sucedaneo si me ayudas a ver si esta bien el uso de los chocolates.

Hi Alexandra, check out my 3 videos on '5 most common mistakes', these help explain the purpose of the 50/50 method. Your sister is correct though, whilst they should still set firm to the touch, the 'snap' is removed so the chocolate doesnt break away from the strawberry. My ebook also covers this in depth. @@pt560 would that really take to the wood? Being bamboo skewers they wouldn't be very porous but his are so green. I'm impressed the colour is so vibrant and would love to know the secret.

@@InspirationalExploration You have to soak the skewers in a bowl with water mixed with food color until they get the color,and then leave them to dry completely on a paper towel

Hey there, @pt560 is correct. Just be sure to quickly rinse the sticks under a tap to remove any excess colour or it will stain your hands. Then dry out thoroughly simply on paper towel or in a warm oven or even out in the sun to speed up the process.
