Hi, CB and CG! That looks like a super-duper yummy dish. I love eggplant. Indian food has the double whammy of a great aroma as well as rich flavor. Plus, the leftovers (if any) can make themselves useful in an omelette or crepe. A winner!

I don't know if I like eggplant tbh! Like, I Don't think I've ever tried it before... I see it all the time at the grocery store but I don't really think much of it. xD
You said you use canned tomatoes rather than fresh why because cheaper than you use òiive oil for frying onions and the lot, To me the olive oil is waste of money, Anyway nice recipe in all. Enjoy it and Thanks.
