If you want a full-proof method to avoid the middle sinking for any cake, bake it in a bundt tin, the funnel in the middle allows the cake to bake from the inside and out at the same time.
Is there a weight measurement suggestion on the bananas? PS. while I enjoy bananas I detest peanut butter. I however love peanut butter cookies. I agree, makes no sense but there you have it. Thanks for all the wonderful recipes, baking is saving my sanity in this difficult time.

I just made this and it was amazing! Super moist and fluffy, and it freezes really well. I don't even like banana's that much but this recipe was really good. I made the mistake and added 3 large bananas, so it was a little bit TOO much banana taste for me - next time i'll just add two!

A quick tip, open and peel your banana from the opposite end. Just pinch one side and it will separate cleanly without mushing it up. Great for overly ripe bananas.
I've made this banana bread twice now, both times were absolutely delicious however the first time I made it, I only had 2 mediumish sized bananas and it was too thick so I added a bit more yogurt, the second time I had three bananas and OH MY GOD from the presentation to the texture and flavour, IT WAS A DREAM, thank you Sally!

I was planning to make banana bread last week, waited patiently for my bananas to get nice and over-ripe only to find them crawling with bugs when I went to use them!🤮 I've now got the perfect recipe for when my next batch of bananas are ready (In their air tight container this time, no bugs again!)

Thank you for this recipe. I made it last night and just had some for breakfast, it's so good. I didn't have yoghurt so I made the buttermilk hack with 100ml of milk as I was thinking it's probably lighter than yoghurt. I added 50g less sugar just cause, all the rest the same. So good it's half gone already and only me and my boyfriend here 🐷

She clearly says 165 degrees C. I don't know where you got 265 degrees from? Most ovens don't even go up to 265 degrees, that's far too hot even for baking pizza.
