Best flour to make Pho (Rice Noodles), Which one has bad smell/tastes better? Qhia ua fawm 

I'm testing these 3 brands of rice and tapioca flours to see which one is best to make pho (rice noodles). These brands are: Jade Leaf, Elephant, and Red Mill. Two brands are products of Thailand and the other is the United States. Each has its pros and cons.
