Thank you for the reminder that 'perfect food comes from imperfect plants' . I'm dealing with someone who never had the chance to learn about growing food or even cooking it! The education about getting rid of the bad parts and working with the good is a lesson my friend needs to learn.

Years ago the Family made Kraut and canned it. It was much better than most that could be purchased. It was a vinegar method that was very easy to make. Unfortunately, the recipe was lost over time and none of the recipes I've read online sound right. Moral of the story - Spread the good recipes around so maybe the shared recipe can return if your copy is lost.

My granny used vinegar would bring to boil add Salton top of kraut in jar pour vinegar into JAR TILL CABBAGE covered put on lid set in dark area for fermenting

I used insect netting on the brassicas this year for the first time. I can't believe I didn't try is sooner. The cabbages were almost bug free . So much less work cleaning them up. The netting was a great investment . I just moved it over to the blueberries to keep the birds from eating half of them and it seems it will last me for years . Might be something for you guys to consider. And hey I have the same shirt. lol. People comment on it quite often.

1 year my youngest got to take a portion of garden in exchange for him helping me in garden. We got 3 cuttings off cabbage. The 1st the heads were bigger than basketballs. 2nd were still nice size, 3rd heads were definitely smaller, but still tasty (son sold the 1st 2 cuttings). That year he also sold 3/4 the pear jelly (we added lace to the rings & ppl bought it up like crazy). Profits he bought candy bars & sold for big profit at school. An entrepreneur at 12

I ferment my cabbage and veggies in jars with the brine method and love it. Just a couple table spoons with meals is so good and does the trick.

Try some cabbage fried in bacon grease with black pepper and salt (onion would go good in it too). Cut the cabbage into quarters, then cut the quarters into one inch strips, cut the strips into one inch squares. Break it up so the pieces don't stick together, fry on a low heat until it all wilts down and gets soft. I like a bit of crushed red pepper and some crispy bacon broken into one inch pieces added towards the end of cooking. Hope you like this.

Yay!!! Great clip!! You inspired me to go and do my first fermentation!I even have my grandmother's cabbage slicer! It took us forever to figure out what it is for. Unfortunately, I haven't seen a crock lid. It must have broken after all thses years!! Keep on doing what you're doing and teaching those sweet babies and us too the things being forgotten! My absolute favorite meal is fried cabbage with bacon and onion. Some cornbread and soup beans on top of the corn bread. Yummy!

Mike maybe try wrapping ur cabbage with big bug screens or netting letting photosynthesis take place while protecting your crops.

I heard somebody say that if you make a t cut cross on the stem you cut the cabbage from, more cabbages will begin to grow off of that stem.

We really have made things harder. Many of our ancestors did this without much in the way of education. My great grandmother could hardly read and gardened and preserved and cooked better than anyone. We make it too hard!

You've inspired me to get a fermenting jar 👌. The chickens also LOVE cabbage. I hang a whole cabbage up under the trees for my hens and they spend days pecking at it.

With me it is different; I can have raw cabbage, but in past time I couldn't had Sauerkraut. But that was Sauerkraut out of the shop(factory) Now my husband makes homemade Sauerkraut in the Sauerkrautpot, and I can eat that without any problems. Well not two days in a line, but it is great. He also fermenting with sweet pepers and union in a jar. And that eating a littlebit by a meal is great. And I just do not have any problems. Hurray for homemade!! And with this Sauerkraut pot you using. We let it stand for 3 months. G'D BLESS and greetings from Inge Noordam (the Netherlands/Europe)

I had never had homemade sauerkraut until this year. We did not plant cabbages in our garden (for reasons you mentioned) but also because even though I have a great portion of my heritage from Ireland and Scotland, there is only so much corned beef and cabbage one family can eat. LOL So we bought some cabbage (green and red) and made our own 'kraut - we added some jalapenos to ours with the garlic. And my goodness! We are planting some cabbage in our Fall garden and Spring garden to see which way works best for us because EVERYONE enjoyed the 'fermented cabbage! Bonus: now that we have chickens, any little critters and extra leaves will not go to waste or live to make more pests for our garden. Thank you for sharing this with us! Looks like little Hezekiah might be teething - but what a smile when he's happy!

Sourkrout! I make as much I can eat . I heat two tables spons every night ! I so swear it it works wonders! I use the red cabbage for more vitamins. You don't need a brind . So massage it enough to release enough juice . I ferment mine for one to two weeks! It's great stuff! If I miss one day without eating it ? I feel the difference the next day .

That's one humongous urn of cabbage/sauerkraut !!!!! What a beautiful harvest of cabbages, that are bearing the evidence of def being organically grown !!!! You'll never get that many grubs slugs & worms enjoying your produce when it's treated with pesticides !!!!! A simple hose off or water bath will usually draw them all out and they can then become added nutrition to your fowl. Nothing needs to be wasted. Akso when you don't add poisonous pesticides the outer leaves that the grubs have feasted on can go as added food source to your other farm animals eg. goats, pigs, cattle, ducks, turkeys etc. What a great video covering a wide range of sustainable gardening. 🇦🇺🤗🙏💞✌️👍👏🇺🇲

My grandpa always pulled a big leaf and layed it over the top after he cut it to keep the sun off so I do it too. I don't get big heads but it is good eating.

I add 1 tablespoon of Redmond salt to a large head of cabbage, let it sit for about 30 minutes then begin to crush and pound until I have a nice brine and shove it into a quart jar. thnx for sharing. I want to grow my own cabbage this fall. I really like sauerkraut and like to keep it on hand. But I'm the only one that eats it.

I have done it with 5 gallon buckets and used a whine perky later to exhaust it out just used a painter’s lid and drilled a hole for the plug

Love this... I've got my first cabbage this year. Crazy I put it in last fall as my first fall homsted garden. I expected to harvest before winter hit but it was a early and had winter.. they got buried in 6 ft+ of snow... along with Brussel sprouts and broccoli... they all three survived!!!! And loads of lettuce and kale! Hoping my cabbage survive the bugs trying to eat it over the last week! 🙌🏼

A straining basket for sink drain makes life so much easier. I use the standard to plug. But when ready to drain, I switch out to the basket.

I soak my cabbages in salted water because my Grandma said it kills the bugs. Hey, beautiful cabbages. Lacy, I do about 1 tablespoon per large head, because my husband has heart problems and can't handle a lot of salt. I got lost for 2 days doing a deep into how to make kraut. Cause Grams was too salty for us. I came to the same conclusion as you: No matter how you do it, just do it! So healthy.

My grandparents have huge crocks that when they don't use them to make kraut they have glass table circles that they use to make them into side tables in the living room. They don't make kraut like they did when they had 5 kids growing up at home but they do it every now and then. I hope to inherit them someday.

I love all leafy greens but they wreck havoc on my digestive system. I love sauerkraut but never thought to make it myself because I don't have mason jars or anything large enough to make it in. Time to head online to look for that crock Lacie has which is just beautiful.

My first round of fermenting cabbage, I went way overboard with the salt. Lol it was so salty. I had to drain the juice and add filtered water to try to cut it. But I still ate it. I just put it on salads and it adds just the right amount of salt to the salad.

Dehydrated cabbage is really good just as a snack. A brine is the way my grandmothers and my mother did it.
