Suet! Yes definitely! Colour powder? Use 1/2 curry powder, 1/2tumeric, Mix a bit of crisco andfrozen real butter, grated, liquid,- use buttermilk, Laminate the combined dough-fold about 5 or 6 times, let it rest in fridge

Hi Keith i did it ...thanks to you i made my first bach of patties and their were good:) i could not find the suett so i used the regular lard. so i'm going to place an order for the suett to use the next time so their can be even better:) thanks again.
This is a great video! Good camera work, nice editing, and a superb personality while explaining the (complicated) process perfectly. Even a sterling write-up! I think you have done a first-rate job. I wouldn't be surprised to see you on TV some day, hosting your own show!
its been a over a year since i saw this video. i just had some beef patties from a Golden Krust by my house here in New York and i noticed something off about them, it was their crust. it completely lacked the flakiness it once had. they were completely dry and the flavor was almost non existent. that convinced me to start making my own patties. your video is on point. thanks for the recipe
The best patty crust I've seen online! I'm Jamaican, and we don't make patties at home in Jamaica so I've been looking for a crust recipe for the longest time!
Thanks. I followed your instructions to a T and they came out amazing. Now I'm volunteered to make mini patties for our next get together. Thumbs up x 2
Kieth might I add you do know what you are doing I've been watching dozens of recipes not one of them came close to authentic Jamaican beef patty except yours , actually exactly authentic thanks Keith
I think you did invent patties, because I live in toronto where we have a bunch of "authentic" patty spots, but these look even better...and I am an addict of scotch bonnet so I'm definitely using a couple when I try this...thanks!
That looked delicious, thanks so much for showing in detail how the pastry should be made with all the little secret tips. As patty is just no the same unless you get the pastry flacky! Great video. Thanks
This is the best recipe I've come across. You just made it seem so simple. I should tell you that there is a market here in Hawaii for some awesome Jamaican food. Bring it Man!! :D
Just meeting you for the first time tonight, I Love your spirit! I'm very impressed with your knowledge of food, spices and cooking. Can't wait for the winter here in New York to over so I can try your jerk chicken on the grill. Keep the recipes coming. I will be purchasing a lot of your spices very soon.
This is a great recipe!! Thanx so much...these r the 1st REAL PATTIES mi see pon utube....I will mos definitley be making these really soon. Keep it up!!
Thanks, Keith! Great demo. I tried my first batch of kosher beef patties for this week's Shabbat meal. They were delicious, but the dough came out flabby and heavy. I will definitely apply your method next time. Shalom from Jerusalem,
I am going to try this, I have never seen Beef Suet here in the USA, but when I lived in the UK you could get it. The yellow coloring is also new to me I always wondered what they put in it. My Mom makes the best patties, she left JA over 60 years ago, but makes them the old time "Bruces" style, without the coloring. As you say it's really the crust that makes it great. Another good filling to try is "Crab" - get the lump crabmeat from the Oriental Store season it as you have but put a little more pepper and put it in the patty crust.....simply fabulous, but of course more expensive
FINALLY FINALLY FINALLY FINALLY FINALLY!!! BEEF SUET MOFOS!!! this is the ONLY way to make it right! I KNOW! You don't know how much dough i've tossed across the room because it's just WRONG with butter or veg. shortening! THIS is the right way! Thanks you Keith!
Greetings today is August 26,2013 I just finish making the crust for my patties thank you Keith for your recipe the patties came out PERFECT the crust melts in your mouth I follow all the directions minus the beef suet I used crisco and unsalted butter minus the white vinegar in the egg mixture I did not over work the dough I wish I could let you taste my patties they are so good and for my filling I did not use bread crumbs I wanted to see the meat I just used the meat, herbs, etc thank you .
They look very flaky, the best crust texture I've seen on RU-vid! Just a note that you don't have to use patty coloring, just use turmeric. Blessings, thanks for the awesome recipe.
I have a pattie recipe. It was incomplete because it didn't have the powdered coloring, and the beef bouillon. They tasted ok, but yours look Great! Thank you for sharing your God given talent.
Thanks for this video! A few questions though 1. is there something else that can be used instead of beef suet? because I have never seen that before 2. How much beef suet? you didn't say what the measurement was. 3. You didn't say the temperature of the oven.
Do not put flour on the pan trust I made these patties and they came out good it is not mandatory to use beef suet just use the lard and you will be just fine. Thank you again handsome, sweet voice Keith have a bless and prosperous New Year God bless you.
Wooooooow I just subbed...This is as authentic as it gets...Thanks Keith...Very comprehensive recipe...keep them coming...Can you make a video on Jamaican stewed pigfeet or trotters please? Thanks in anticipation :)
Greetings trust me it is not mandatory to use the beef suet my crust came out perfect trust me the crust just melts in your mouth I was so surprise today is my first day making crust and it came out excellent better than golden crust do not stress if you cannot find beef suet I use unsalted butter and crisco and I lightly knead the flour with a fork and also with my hands. Also when you put the patties on the baking sheet please do not flour the pan use parchment paper but flour the rolling pin
this recipe is fantastic I just made these patties and they are to die for. I literally have people fighting me to make these. and the crust is as flaky as he says and so delicious. Thank you soo much for this recipe! I would have kept it to myself...lol
Keith, I'm finding difficulties locating the beef lard, but I noticed my patties were missing that texture you spoke of and showed us. I currently reside in Lithonia GA, east of ATLANTA, any intel on where I may be able to find some? Thanks in advance. Your videos and recipes rock!
Awesome video. Love the recipe. You are right about suet. The only thing in a proper Christmas pudding. Why are you not on the Food Network Channel...you have what it takes and them some. You are perfect for TV. \i would never miss an episode!! Nicely done. My kids love patties. Unfortunately up until now, I didn;t know how to make them from scratch. Thanks!
Yes sir Mr.Keith!! Looks absolutely DELiCiOUS :-) I will definitely be using your recipe for this beautiful flaky crust!! I will be trying a veggie patty though. Either way.. I LoVe iT!!!
@whytesapph i tried turmeric yesterday when I made these, and it was not the same. It did not give the patties a intense yellow color as I saw in this video, and the dough taste like curry. I will buy the yellow coloring next time. But i did use 3 sticks of butter to replace the beef suet ( I cant find it anywhere and I am not about to order anything lol), and the crust came out wonderful. But I will use yellow coloring powder next time, that is really a must. Thanks Keith :)
Call your local butcher's shops. It took me a while. You can find it, especially around the holidays. It is commonly used in beef kidney pies a holiday favorite in some families. First time out, I only found it in one solid mass. I had to squeeze it through a garlic press. :-) Finally, I found it just as Keith shows it. So keep looking if you don't find it in the right form the first time. When you find it, stock up and keep frozen!
Keith! You're a God! But you need to do an update and make one complete video with all the steps from scratch. And with different patties, beef, chesse, chicken etc Please!!
@@SpiceKing yess!..Your recipe is my go-to because it has an authentic jamaican taste to the point my family is shocked that I made it...! Making another batch tonight!
Aneisha Barrett the same amount that he said to use on his website.. I didn't change anything I followed the recipe exactly as he said.. hope this helps!
Look ere! I tried this method( negating the MSG and swapping out the yellow food coloring for Turmeric) and let me tell you ..fight almost bruk out when I served these bad boys up at my sisters party! TRY them!
Hi. This is a FANTASTIC recipe. Hands down, the best that I've seen on the Internet. I have two questions: 1. Can I use curry instead instead of yellow coloring powder? If so, how much. 2. I can't find beef lard where I live. What could I substitute it with that will give it the same taste?
Great JOB! EXCELLENT results!!! BEST recipe I've seen!! I can't use the Beef Lard though.. but I can see that that's what makes all the difference. I was going to ask for a substitute or alternative..but I see that that's been asked already. :) Thanks for a great video on this!
A lot of the recipes I've seen online for the pastry are pretty crap but yours is good. Thanks for the vid. You should indicate the weight of the suet added though.
Umm, I love Jamaican beef patties! Your recipe looks good. I gotta admit though, I was watching U more than the cooking of the patties. Thanks for a great vid!!
thanks for watching my friend, you do not have to render it. you can use it ground as is unless there are meat remnants in it. look for the suet that is white and not filled with meat trimmings also make sure to use our spices for the best results! :-)
