Seriously i would hate to see the Food Busker picked up by television. I love the format the way it is now, where you can click and watch any episode anytime you want, one where the programming is between you and the Food Busker, not you and the food busker and a tv programming manager. If he went to television we wouldnt get this many episodes in a year.

Been eating that all my life used the boiled eggs but we did not use the Ricotta will have to try it, for the pork use ribs makes the sauce more delicious. My Mom used to do the meat balls the day before, and they are so delicious, and yes a lot do get eaten before they are used in the Lasagna. Do loads, because lasagna is delicious cold and reheated. Great Video thumbed up. Just to mention the Manzetta tomato's, the one year, while on holiday in late September or early October, I helped make one years of Passata tomato sauce, the Manzetta tomatoes were delivered in the back of a three wheeler Ape. That time of the year the Manzetta tomato's are at their juiciest. Started at 4am finished late afternoon, believe me its worth the effort for your Ragu & Pizza sauce

You had me at lasagna. You also got great advice from a legend in the culinary world, Genarro Contaldo. Lasagna is one of the great comfort foods in the world. It's like a blank canvas, in that you can put different things in lasagna. Many variations to it. I have made a seafood lasagna once. It was so good. Great video. So informative. Cheers, Chef John! ✌

I've been eating the Neapolitan lasagne for the past 40 years, guessing it was a Southern Italian variation (as that's where my grandparents are from) but never realising it's the OG of lasagne! People need to ditch the bechamel and get this one in their lives - pronto!

You're killing it with the quality of the videos lately JQ. Never heard of the Naples style Lasagne before, but everything about it sounds amazing! Sausage, ricotta, and egg? Why not. Might have to dust off the old pasta maker and give it a go... is that a recipe I see coming next week?

My grandmother from Sicily has her own recipe. It also uses ricotta, but not boiled eggs or meatballs. Ricotta in lasagna is so much better than what most places use

Another great video, that lasagne looked amazing. I had a version of this when I was on the Amalfi Coast, which was damn good. We were surprised to find slices of egg in there: didn't realize that was the authentic recipe from the region. Overall, think I prefer ricotta and eggs to Bechamel. Look forward to seeing the FB take on this recipe.

We actually have quite similar dish to this specific kind of lasagna in Slovakia called French potatoes (Francúzske zemiaky). It is real comfort food. Just instead of pasta u use potatoes.

Chef, brah, brometheus, this vid, the editing, your personality... Boom! 10 stars. Your personality back in the streets, talking to people, travelling, it's the best. A Busker food and travel show would be sick. Now, I personally think Italian food is heavily overrated. It's good, but I think people give it a bit too much hype. That said, I appreciate the work and the recipe these fine folks showed you.

I've never had hard boiled eggs in it, but lasagne in the US is nearly always presented with ricotta, tomato sauce, and some kind of meat. That seems to be the more 'traditional' recipe for the dish that is most popular here. Makes you consider the regionality of some of our early Italian immigrants. Thanks for the interesting history and delicious food shots!

Considering the part of Lasagne I normally dislike is the bechamél, Lasagne Carnivale might just be the ticket. On another point John, I absolutely love your new look to your production. Your videos have come on leaps and bounds lately and they were good before. Getting Gennaro along for the ride will just make this series even better.

Instead of bechamel I sometimes use a mix of ricotta, mozzarella and parmesan, sometimes even cottage cheese in the mix too. Just mixing cheeses together is also easier than making a bechamel.

Your video quality has improved a lot, but color correction in this video is very off (unnatural, greenish oranges). Fortunately it's easily fixed, just get a colorimeter, calibrate your displays and be careful when toning your videos (skins should always look natural). I hope this helps!

I was in Amalfi (the town) last summer and found a sushi/italian fusion restaurant that was incredible. Had a few really cool food experiences there, but you really gotta try hard to find them amongst all the touristy places :p

The one recipe I found on YT was more like a béchamel sauce with the meat in it. Hope you'll dive deeper in the lasagne world. oh and btw the new material and filming style looks slick!

Ciao Paesano From next door family is from Montella, Avellino. Similar to the recipe above but no ricotta and pork ribs instead of pork belly. Those idiots who slagged off Naples and its Lasagna know sweet FA as they have not tried it.

If lasagna is on the menu I always order it. We have lasagna parties where we take turns having friends over to try each other's lasagna. Mozzarella on top though is a must. All time favorite meal bar none.

That’s how most of the people in I know make it here in chicago, in the states. Never heard of it being made with bechamel before. Tomato/pasta sauce and ricotta is what I know.

Food Busker Not sure, just know most restaurants and people make it here using tomato sauce and ricotta, along with a few other ingredients. Maybe it’s because of the regions the Italian population in Chicago immigrated from back in Italy, versus where they immigrated from in other parts of the world, such as New York and the UK? Even my mom, used tomato sauce and ricotta cheese as some of the main ingredients because that’s what the people around us used. And we were super poor and also not from Italy. Just interesting how some parts of the world are used to a common dish being made one way, and another part another way. Just came across your channel a few weeks ago and absolutely love your content.
