Let’s make yummy blueberry muffins
· 2 cups all-purpose flour
· 1 1/4 cups granulated sugar
· 2 1/2 teaspoons baking powder
· 2 large eggs
· 1/4 teaspoon salt
· 1/2 teaspoon ground cinnamon (optional)
· Fresh or frozen blueberries (as desired)
· 1 teaspoon flavor extract (e.g., vanilla or almond)
· 1/3 cup milk
· 1/4 cup vegetable oil or melted butter
Instructions:
•Preheat your oven to 350°F (180°C). Line a 12-cup muffin tin with paper liners.
•In a medium bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt. Set aside.
•In a large bowl, whisk together the liquid ingredients: eggs, milk, oil or melted butter, and flavor extract.
•Add the sugar to the liquid ingredients and whisk until well combined.
•Gradually add the dry ingredients to the liquid ingredients, whisking until just combined. Do not overmix.
•Gently fold in the blueberries.
• Divide the batter evenly among the muffin cups.
•Bake for 25 minutes, or until the muffins are golden brown and a toothpick inserted into the center of a muffin comes out clean.
