The way you know a Persian family really loves you is when they will give you the first cut of tahdig and also offer you the last. They will also wait for you to roll your eyes back in delight with your first bite. They’re lovely people and love their guests.
Made this last night and it came out fantastic! Served it with spicy Moroccan meatballs and roasted eggplant ; they went great together. I made a wish while turning it out and was a bit disappointed when a handsome Persian man failed to appear but the friends I made it for were very happy. That dress is drop dead gorgeous! We need more videos from you and I think everyone would be happy if you did a little fashion show.
Bless you this is so beautiful!!! I have Iranian friends that taught me so much about their culture. I however always put thinly slice potatoes at the bottom of the pot and then pour the rice on top. Then it comes out like a cake.
Tara this was delishhhhh! First time to make Persian rice although I've eaten it many times and I was happy when I saw the crispy bottom my Persian friends would tell me about! I also appreciate the simplicity of your ingredients because I only had saffron on hand. Thanks again!

Not sure who or what is cuter, Tara or the tahdiq. Thank you Tara. We live in Colorado, and my partner of 10 years is Persian. His cousins make tahdiq whenever we go to visit them in Florida. They are all very warm and wonderful family. I am scandinavian and am frankly intimidated by the prospect of ever making a tahdiq as amazing as his cousins'. Instead we got a Persian rice cooker from a store in L.A. I follow the recipe that came with the appliance, turn it on, and wait. Makes terrific tahdiq. My touch is experimenting with spices like saffron and cardomon, and I love to add Persian cranberries which gives it a nice kick. Now if he would only marry me, that would be my tahdiq!

I just made this last night and the texture of my rice under the tahdig was great, but parts of my tahdig got burned :( I used a nonstick pan but I have a feeling the culprit may have been my particular stove top. I followed the cook times that were recommended in the video too.... Next time I will cook for less time than was suggested in the video. Will also add in saffron for more flavor! Thank you for this recipe! It was definitely fun to try!

Hi! love this video. Since i was a baby, i have been surrounded by persian culture because my Nanny is persian and would make tahdig once a week, but she made it with potatoes in the crust as well as crispy rice. Also I might have missed it, but WHERE'S THE SAFFRON?????????????

Hi Tara! I'm in the process of learning how to cook Basmati rice Persian style. I've made it a few times but I see why the right pot is important!. I followed the link to Amazon for the pot you reccomend. However, it's unavailable and they don't know when or even if this paticular pot will ever be available.
