Louisiana Style Red Beans and Rice Recipe with a Cajun accent. Hope you enjoy it.
Let me tell ya a little about Red Beans and Rice. Red beans and rice is an emblematic dish of Louisiana Creole cuisine (not from the Cajuns) traditionally served on Mondays with red beans, vegetables, spices, and pork bones as leftovers from Sunday dinner, cooked together slowly in a pot and served over rice. Some of the meats we used were ham, sausage, and tasso ham. Now if ya visit a local restaurant in New Orleans you might have a choice of meats such as Fried Chicken, Pork Chops, Sausage Links, Grilled Chicken Breast, and a ham bone. Back Pre-Katrina while working for Dixie Mill my co-workers and I would walk down to The Praline Connection for lunch on Mondays and have Red Beans and Rice with Fried Chicken or Grilled Pork Chops. It was really good!
Ingredients:
* 1 to 2 pounds of red beans (Laura Lynn UPC: 0 86854 02117 0)
* 4 Cups cooked Rice Laura Lynn UPC: 0 86854 00472 2
* The Trinity: (Sauce à la Mirepoix which is a buttery, wine laced stock garnished with an aromatic mixture of carrots (Cajuns use Green Bell Peppers (Trinity)), onions, and a bouquet garni.)
* 1/2 cups finely chopped celery (Fresh from Food City in Trenton, Georgia)
* 1/2 cups finely chopped white onions (Fresh from Food City in Trenton, Georgia)
* 1/2 cups finely chopped red onions (Fresh from Food City in Trenton, Georgia)
* 1/2 cups finely chopped bell peppers (Fresh from Food City in Trenton, Georgia)
* 1 clove of chopped Roasted Garlic (Fresh from Food City in Trenton, Georgia (The Cajuns Holy Ghost added to the Trinity))
The Seasoning:
* 2 12oz ham hocks (3 lbs total from Suncrest Farms UPC: 7 06517 00308 3) or (1lb diced Ham)
* 1 lbs Smoked Sausage (2 lbs of Conch Original Smoked Sausage UPC: 0 12176 20010 8)
* 2 Bay leaves (Fresh from Food City in Trenton, Georgia)
* 3 Tbls Paul Prudholme's Pork Magic UPC: 0 47997 12330 5
* 1 Tbls Tabasco Sauce UPC: 0 11210 00001 8
Additional Ingredients:
* 4 Tbls Red Cooking Wine to deglaze (Reese Vintage Cooking Wine UPC: 0 70670 00805 7)
Time: 4 hours cook time
1. Cover beans with water, let stand over night. Drain.
2. Place ham hocks (1lb diced ham = less fat to skim), celery, onions, bell peppers, Bay leaves, and seasoning into large saucepan with 10 cups water. -(if other meats then cook them at this time)
3. Cover and bring to boil. Simmer until meat is fork tender, about an hour after boiling starts, stir occasionally.
4. Remove ham hocks from pan, set aside, skim fat from pan, discard. (I used 1lb diced ham)
5. Remove a significant fraction of liquid from pan, add drained beans, add back just enough liquid to cover beans. Simmer beans until they just begin to break up and liquid starts to become creamy, about 45 minutes. Stir frequently. Add back liquid as needed to keep beans covered.
6. If beans begin to scorch, do not stir, transfer mixture to another pan without scraping scorched beans into new pot.
7. Add ham hocks, cook 45 minutes more, SERVE IMMEDIATELY (I did not use the Ham hocks this time)

Thank you for sharing this truly Cajan version of Red Beans & Rice. I think there are so many thing one can add, but that is a personal preference and not essential. Sausage, ham, the trinity and time; what a great combination. Simple and straight forward.

It's kinda runny, but I know it's good. It's soupy tho. I'm from Louisiana. My ant-tee from bougalousa, living in Gramercy made hers creamy. My mama made hers soupy like this one And my daddy who is from North Louisiana put ground beef in his, which was sacreligous! But my mama red beans were the beat of all the NEXT DAY. Her gumbo was like that too. It tasted better the next day

On my very first day of college in NOLA, I went thru the chow line and they were serving RB&R as one of the entrees. It was a red (I mean RED) goop over rice. I passed, and went the next 3 years believing that RB&R was this nasty red stuff. A friend of mine's girlfriend , a local, had some of us over one night and made RB&R; I told her about my experience and she made me promise that I would taste hers. OMG!!! It was so good. From that day forward I have been a fan and ha e made a few times for myself. My wife, who I met in college in NOLA, doesn't like it because it has beans. (How I remain married is a mystery)

Merry Cajun Christmas. Thank you. I didn't use 2 pounds of beans there's only 2 of us. I had some leftover ham I wanted to use, and I always have all the other ingredients on hand. It's a small electric bean pot. I put them up at night with water, brown sugar, salt, pepper, garlic, onion, bay leaf for a 6-8 hours until they are completely cooked and before they fall apart. The temp is very low. Just makes it easier and less time for me the next day when I assemble the recipe to have the beans already cooked. It's really delicious.

Gotta use animal fat to get those sausage at the beginning or at least a high smoke point oil. that sausage has paprika and sometimes smoked paprika, it gets colour on it quick, less colour is better coz that sausage is burnt, the spices in it burn quick. Otherwise this is a boss dish, good slow patient cooking... Making something out of simple things, into a special dish, an event of a dish even.. Could sit centre table with sides 😎🙌

That looks fantastic! I would imagine you used andouille sausage, kielbasa from a Polish butcher (as opposed to store bought brand) works as well but you can't beat the Southern spiciness of the andouille. Liked and subscribed, have a great day as well as a great Holiday Season!

Turn the heat down. Cast iron enamel pans conduct the heat too well and you don’t meet to have the flame so high! Please turn it own a little.

I followed the recommendation on the bag of beans then added one extra cup. I like my beans to have a sauce rather then dry. I use water. If I had chicken as my protein then I would have made chicken stock and used it. Thanks and Happy New Year.

Gumbo is made using a roux. Red Beans and Rice is not. Both dishes are made with similar ingredients less the beans but the techniques are different. Happy New Year.

we would put a bay leaf or two in. We never used thyme. I use thyme more now then pre-Katrina. Have a Merry Christmas.

Not to confuse people but a mirepoix is onion, celery and carrot. What you're referring to in Cajun cooking with the onion, celery and bell pepper is referred to as the holy trinity. Don't want people hearing mirepoix and then they go and add carrots to their red beans and rice instead of bell pepper.

You're almost correct "Holy" trinity has "garlic" in it with the onion, celery and bell pepper otherwise it's just Trinity.

Don’t forget to add a teaspoon of baking soda to your finished beans, saving yourself and family from embarrassing gas. Be sure to rinse your rice well before cooking it avoid additional stomach pains.

Just an observation your heat is too high the sausage is burnt not browned. Mirepoix is French and has "carrots" along with the onion and celery. You have a "Trinty" which is Cajun instead of carrot its bell pepper. Looks good though!

Hello and thanks for the comment. I have moved away from the background music as I agree with you it is irritating when you're trying to hear what's being said. Why are mentioning creole when making red beans and rice. I guess if you put tomatoes in the red beans, you can call it creole. I've never used tomatoes when I make red beans and rice. I use the holt trinity, garlic and time. I may add cayane I will use both smoked sausage and andouille and throw in ham as well.
