As a white guy who has been around Asia, and studied Thai food. Maple syrup does NOT belong in thai food. Most wok dishes uses base ingredients which usually are oyster sauce, fish sauce, name prik pao, golden mountain, black soy sauce, sugar, msg and sometimes pepper. They add chilli, herbs and other ingredients to create different flavour profiles. But restaurants generally use a mixed base sauce which they use and tweak each dish to get the right profile.

Agree that it's not traditional, but I think the flavour profile of syrup is similar to palm/coconut sugar (more so than normal sugar) which makes it a good substitute if you can't find palm/coconut sugar locally in the west.
