Thank you for watching my best trip tip I've ever had video. On this video, I seasoned 2 tri tip steaks with my favorite seasoning from Cattleman's Grill and cooked them on my Chud Box direct heat cooker. It doesn't matter what I cook on my Chud Box, it all comes out tasting really good and these tri tip steaks were no exception. This method of cooking tri tip steaks is in my opinion the only way tri tip needs to be cooked. The flavor you get cooking over direct coals is unlike any cooker.

I just made some of that horseradish sauce for some French dips and I gotta say adding mustard seeds is a game changer! Love that extra burst of flavor.

Great video. Definitely going to try that sandwich. I love a good horseradish sauce. My go to for tri-tip is some olive oil, a little splash of soy sauce and Worcestershire sauce and then a good coat of Montreal Steak seasoning. So good. Use the same seasonings to saute some mushrooms as a side. Thanks for the content.

I truly truly truly recommend that cattlemen tri tip rub. I’ve been using it for the last 5 years consistently and it never disappoints. Great on chicken as well!

I’m from California where Tri Tip is king. I’ve been cooking tri tip like this on my Weber kettles for 20 years. 20 minutes on each side, turn once half way through, let rest for 10 minutes when it’s done. Perfect every time. Great video Joe!

I do it the same way on high heat of course. (400 degrees) does the trick.

Nicely done Joe! I usually go with the Webber for TriTip, but I also like to put a couple of cinder blocks and elevate a grill inside of my off set’s firebox. It gives it that Santa Maria direct heat flavor with a touch of a smoke.

Looks great! I cook mine on a kamado with a hunk of hickory with the fat cap on but scored with hatch marks, and use a rub of kosher salt, chopped fresh rosemary, and minced garlic with enough EVOO to make a thick paste. I start out over indirect heat until it hits about 130° then blast it with direct heat for a sear until it hits 135°. (An indirect sear). It works for me.

I don't have a Chudbox yet, but i've been experimenting trying to 'direct heat' cook on my Yoder YS640. I remove the diffuser plate and put in the grill grates over the fire box area but I don't cook on them. I cook over the fire and grates on the full size top rack. I've made Bradley's skin on chicken thigh method a few times this way and it is some of the best chicken i've ever made. I just made tri-tip this weekend but I did traditional reverse sear, I think I might try your method next but on my Yoder. Best I can do for now! Thanks for sharing your sauce recipe!

Coals done give the smokey flavor that wood like red and white oak are notorious for. The tri tip city made this cut famous through open pit red oak.

Awesome cook on that bad boy Joe! Tri-Tip seems to be a more west coast cut. Here in Houston I have a hard time finding it, about the only place I've ever seen it is at Costco.

The biggest bite in RU-vid hands down. Looks perfect. A twist that we have been doing is a mixture of wasabi paste and mayonnaise. We use that instead of horseradish on beef, fish, and whatever is in the fridge. It shines on brisket sandwiches.

Throw a little olive oil or avacado oil as a binder. I’ve used many different seasons on tri tip, Santa Maria is the best! Holy cow meat church is damn good as well!

I'm a Cali son and I've been cooking tri-tips for close to 40 years. A simple recipe is to marinate it in soy sauce, garlic .ginger and onions. Over night is great but just a few hours works well. Yours looked delicious. Chimichurri would go well with it. Great job of cooking.

Thanks Joe. Never done a tri tip before, not very popular hunk of beef here in Texas. But wife picked up 2 since they were on sale at HEB. So looking at ways to smoke/grill them. That sandwich looks pretty good to try for the 1st one. Just have to figure out whether to do it on kamado or weber kettle.

Looks good Joe. I grew up in central California so I’ve had more Tri tip than I care to admit. You can’t beat some Tri tip with fresh made salsa,bbq beans and French bread with some butter. Oh can’t forget a simple green salad with Italian dressing as well

My man, you know your a SM veteran when you reach for salsa to top that meat with. The French bread is the ideal vessel to make thr tri tip sandwich. Can't forget those pinto beans too (none of those sweet bbq beans either)

I cook my Tri-tip on the gas grill or BBQ all the time... the key, let it rest in aluminum foil for 15 min, great meat !

Nice! Personally, I roll at 150 until it’s at 115 or so then I seat it. Seems to get a thick smoke ring about 1/4” plus, and a good sear.

I do the same at Costco, Look for the marbling. I firmly believe some prime meats get mixed with the Choice.

The last Tri-Tip I cooked, I hung it from the rack on my drum until it reached 120, and then seared it on the Kettle. The flavor was great. But I had to foil it during rest because I was cooking sides, and it overshot to Medium Well in the thin side. Next time I'll take it off the drum a little earlier and let it rest before I reverse sear.

Costco does do an aggressive trim on their tri tips, but I think the average tri tip gas griller prefers it that way. I always smoke and reverse sear my tri tips, but you can do them so many different ways and it is always good, yours no exception!

I always trim the fat cap off on Tri Tip. Dry brine for 24 hrs and get that seasoning on the meat.

@@oldskoolbird it depends on the fat cap. Sometimes on lower quality tri tips the fat is almost papery and you can just peel it off. I will trim that. But if it's a nice real fat cap, I will treat it more like a picahna. Depends on the mood too, probably don't want fat in sandwiches, but tacos you might want it.

Yeah, but there are usually 1 or 2 nasty looking glands (lymph?) under the fat cap on Tri tips, so I always remove the cap from them if I buy untrimmed. If you get a well marbled one, there is plenty of fat and you don’t miss the cap, IMO. If I’m hungering for a nice fat cap piece of beef, I always go picanha! Thanks for the great video, Joe!

I've had amazing food cooked on both offset and "traditional" grills, so no disrespect to offsets. But I gave my offset smoker away when I realized I was doing everything on my traditional grills. Temperature control is (well, can be) a bit more difficult on the "direct heat", but you burn a lot less fuel to maintain the same temp long-term.

I have an inexpensive Dyna-glo Vertical offset and I've put my ash pan and coals in the cook chamber to do direct tri-tip, chicken and beef back ribs up about 18" above the fire...nothing better. I'm actually not big a fan of smoked chicken I much prefer direct cooking for chicken. I also found beef back ribs, especially if they're already cut, do great over direct heat

Hell yeah Joe, that's how Tri-Tips became a thing out here, we would always just fire up the Q and slat pepper garlic powder, sometime Montreal em up and throw em on. Back in my day... These kids these days with their wifi controlled smokers, they don't know what walking uphill in the snow was like!

I'm jealous....here in Macon, GA it is hard to find Prime of anything. Only recently have I seen Flat Iron and Skirt steaks.....Tri-Tip, never. I'd have to order it, or drive to Atlanta if I knew where to go. Choice grade is about all we get here...yes I'm jealous, but love your videos.

The drums have a similar flavor to a Kamado style cooker. In my experience, the flavor is much more potent in a drum smoker. 👍

@@SmokinJoesPitBBQ If I'm not cooking the whole thing, I trim them into more blocky triangles "clean em up" and use the trim for Beef Broccoli / stir-fry, and then cut steaks out of them for au poivre or whatever kind of pan seared / pan sauce dish I'm feeling. I've even 'unrolled' a whole one into a giant thin skirt kinda thing and did the criss-cut for a Korean short-rib style thing, my favorite cut of meat hands down.

How well does the charcoal burn in a box like that. Usually it sits on a rack and can get air up from underneath but on the box it sits on a floor. The doors do let air in but it doesn't seem as efficient? Would this work on say a smokey mountain or other bullet smoker without the water pan in?

They sure do! I've been using the old cheap Brinkman water smokers (often without the water pan) for 25 years. Especially for baby back ribs and steaks

The director who I neighbor said that the prime prices will vary from store and vary at the same store depending on current sales and stock remaining and next order. Seems that I can find the prime tri tip within about 40 cents of the normal which are still amazing. Also some locations sell the cap steaks - those are the spinalis off the prime rib eyes and are sold at the same price. Have to ask the butcher as these are up to the store and meat department and availability is dependent on that.

For pre made rub Susie Q’s is the best. No way charcoal is beating red oak for flavor. The chud box and Santa Maria grill are similar enough I really don’t see a difference in cooking style they both cook over coals.

I've noticed Costco pretty much always cuts that fat of the tri tip. Great cook! Amazing as always.

I am glad I'm not paying for the fat anymore. I've found that the silverskin in between the meat and fat isn't pleasant for most guests.

That's quite an ordeal. Best Santa Maria seasoning is equal parts of kosher salt, coarse ground black pepper, and granulated garlic.

The distance of the charcoal from the proteins. This is a much slower cook giving your food a much tastier flavor.

I wish the Deerfield Township Costco in Cincinnati (disclaimer: where I work) offered plain tri-tip. I'm not super happy about paying for the "up to 16% solution" in the pre-packaged tri-tips they sell.
