Hey Ryan, came across this video on RU-vid and completely watched. I was fascinated as this is the core of my channel too. I’ve got 3/4 of these cookbooks and covered these myself, in particularly DR Greger. Very insightful and superb presenting. I actually converted recipes to be WFPB from lots of great cookbooks, like Ottolenghi. You’re right, lots vegan recipes are not healthy, including Bosh, so would of left that last. Intrigued with Hugh’s book, as I’m a big fan. Subscribed and look forward to genuinely watching your videos. James
