Ingredients ☟
Spicy tofu and broccoli
(3-4 servings)
1st coating layer
- 5 spoonfuls chickpea flour
- 3 spoonfuls tapioka powder / corn starch
- 1 spoonful nutritional yeast
- 1 tsp salt
- 1.5 cups water
- Olive oil for coating
- 3-4 tbsp chickpea flour (before the batter coating)
- 2 cups panko breadcrumbs
2nd coating layer (GF)
- 2 tbsp vegan mayo
- 5 tbsp tamari
- 2 tsp smooth dijon mustard
- 3 tbsp sriracha
- 2 tbsp tomato paste
- 1 cup coconut milk
- 2 tsp terrayaki
- 1/2 tsp - garlic, paprika
Dill dip (GF)
- 3-4 tbsp yoghurt
- 2 tbsp lemon juice
- 1/2 tsp garlic powder
- 1 tbsp pickles water (optional)
- Salt pepper by taste
- 1 bunch of dill
Tofu - 200-300g
Broccoli - half medium head
Cashew cheese sauce (GF)
(500ml)
- 1.5 cups raw cashews (soaked in water for 3 hours minimum, depending on the blender)
- 3 tbsp lemon juice
- 1 cup water
- 1/2 tsp (each) - garlic powder, smooth dijon, turmeric, paprika, salt
- 4 tsp nutritional yeast
- 1 tsp sriracha
- Coriander / parsley leaves (by taste, optional)
- Pepper by taste
Cauliflower, broccoli
Others
Snow pea, bok choy, green beans, spinach, rucola
