SAINT LOUIS, SENEGAL - Welcome to Saint Louis, a cultural capital city in northern Senegal, on the bank of the Senegal River, Atlantic Ocean, and near the border of Mauritania. Saint Louis happens to be the homeland, where you will find the original Jollof Rice, known locally as Thieboudienne. Today we have the privilege to see the full process of making jollof rice, one of West Africa’s best foods!
I have great memories of when I was growing up and I had many friends from West Africa. Occasionally they would come to school with homemade jollof rice - and I remember my first taste which was love at first bite. Something about the spices, tomato rice, and tender meat or fish, garlic and chilies, all combined to make one of the most comforting foods known. You will find versions of jollof rice throughout West Africa and all of Africa, but Senegal, and specifically Saint Louis is the birthplace of jollof rice and where you’ll find the original version. Throughout West Africa you’ll find jollof rice cooked with a variety of meats, but in Senegal it’s most common with fish.
We were invited to a local family home and they cooked the entire process of jollof rice (thieboudienne) from start to finish. It’s an incredibly complicated dish with dozens of ingredients, herbs, and seasoning. I loved all the different vegetables like the bitter eggplants and the hibiscus leaves and tamarind. Once all the vegetables and fish are cooked in the tomato paste, they are taken out and the rice is cooked within the liquid. Additionally she made an amazing sauce of onions and carrots and tomato sauce and chilies. Once all the ingredients were ready, the jollof rice are assembled on communal eating platters with rice on the bottom, all the vegetables and fish on top, and extra onion sauce sprinkled on top.
I can say it was the best jollof rice (thieboudienne) I’ve had in my life!
Later we went on a horse cart tour of Saint Louis and visited the amazing fishing village along the Atlantic coast. People were cool and the atmosphere was lively and vibrant.

Being a Congolese, I always knew jollof rice was from Senegal until I moved in the US where Ghanaian and Nigerian fight over the best jollof, and Senegalese don’t mind them. 😂😂😂 They know they have the original 😂. Non mais la cuisine sénégalaise est très bonne.

I'm from New Zealand, and traveled to Dakar Senegal back in 1997 via a train from Bamako in Mali, you could buy street food off the vender's at each station who would pass their food into the carriage. Couldn't believe how fresh and good the local food was not to mention the hospitality of the African people.

Oh Thieboudienne is in my opinion THE BEST MEAL EVER !!! I could eat it EVERYDAY FOR 2 YEARS without missing one meal. This meal is mainly the reason why I wanted to marry a senegale girl when I was younger. It's ssssoooo goood, I really LOVE IT !

As an Ivoirian I grew up with a lot of Senegalese in my city. My best friend growing was from Senegal , I used love eating at his mom Jollof rice. It is on a different level .A Nigerian friend of mine asked me if I had tried Nigerian Jollof rice, I said yes, but I told him nothing can compare to the Senegalese version , he tried to argue with me. I looked at him , like dude really?!

@@coulj6917 Even our Ivorian Riz au gras is better that theirs however, we still recognise that Jollof is coming from Sénégal and we give them the crown 👑 for it and never make any noises around the fact. But sometimes I feel like ghanéens and Nigerians kind of try to ignore that it is coming from Sénégal 😂 Fun fact: Ivorian Jollof won the best jollof competition in front of Senegalese, Liberian, Ghana, Nigerian and Gambia last year, even I was shocked

Mark you can't even imagine the importance of this specific video. It's profoundly symbolic. As a world traveler myself, I was surprised to hear people from other West African citizens claiming the origination of Jolof rice. After UNESCO recognizing it as Senegalese cuisine, you went to the sources of the food itself. Wonderful!! This food is associated to the legendary name of Penda Mbaye, a lady who supposedly was the first to cook Thieboudiene. Yes , there is a full history behind each food. I used to challenge my African friends by asking them to locate Jolof on the map before claiming whatsoever, just to kid them :) As a Senegalese, happy to know that our food has become widely spread and thanks to you Mark for your immense effort. Thank you oh! Senegambians should remain unbothered by the Ghana-Naija jollof rice beef. Just watch two kids fighting each other to claim something whose name has no meaning in their local languages. I am even happy Senegalese/Gambians call this recipe Thieboudieune/Benachin so that they don't get dragged in this war involving hard rice cooked in one-ton-of-tomatoe stew.

I'm Ghanaian and will be cooking Jollof this way from today, it makes sense instead of using fresh tomato I will only use tomato puree, add green onions sweet pepper and more red onions. Thanks for sharing this video.

you can use both, the paste has more acidity so it's interesting to add it to the mix. just make sure you simmer/cook the fish in the broth instead of frying it as some people oustide of Senegal do.

She reminds me of an Aunty or Grandma in Pakistan Making Biryani or Pulao. But Damn that Jollof was takes even more preparation than Sindhi Biryani. The effort and amount of ingredients required for that was something spectacular. As someone who eats Pakistani, Persian, Yemeni/Arabi rice regularly, that is one hell of a dish right there. I am very impressed. This kind of cuisine for me blows all this high class French Italian and European ‘Michelin star’ type of food out the water. Gimme rice and meat/fish cooked in tomatoes and real spices any day. I want to try a jollof like this, I’ve had it before one time but it was nowhere near the complexity of this Senegalese one

This takes me back to days living in Clinton Hill, Brooklyn, there used to be a Senegalese restaurant called Joloff and it was such a hub. On any given day you would find people of every stripe breaking bread together and the food was magnificent. I had many birthday celebrations there, and the family that owned the places was so warm and friendly. I live in Central Florida now and literally have not ever seen a Senegalese restaurant here as yet but once a Senegalese friend of mine surprised me with some amazing homemade thieb on new years eve of 2018. You know I escorted a friend to Harlem to get her hair done by the “west African hair braiders “. This was in 1998 and the salon was packed. I braid hair too so I was watching how they put huge braids in the middle of peoples heads and pretty ones towards the front 😁…any way some of them were eating with their hands out of a huge lunch box full of fishy smelling rice. I’m from zambia and I’d never seen rice eaten by hand or rice with so much stuff in it . My Freind was black American and couldn’t understand that i was culturally different from the Senegalese. She kept asking me what are they saying… your African … I’m like they are from another country in another part of Africa, I ain’t got a clue what they’re saying 😃. It just wasn’t making sense to her . So I’m not even listening to them I’m watching this lady scoff down this fishy rice with all sorts of stuff in it AND Iim telling the lady braiding my Friends hair that the box she made at the back of my Freinds head is way too big and can fit 4-6 braids . It makes them ask me where I’m from. I told them and they were like yeah ok she’s an African who does her own braids so we better just do it the way we supposed too 😇busted 😁. That was my first and last time being around Senegalese ( or west Africans as we called them) hair braiders and the rice. Now I live in london and these Nigerians swear they’re the best 🤦🏽‍♀️! I’ve never seen a Senegalese person or a restaurant … I’ll have to google it but I can’t take all that chilli ! And rather than call them west Africans I now distinguish them by their nationality 👍🏾 exposure is so important. My husband and I said we’d try the recipe but with less chilli and less of the fishy aroma , we’ll use some beef stock 👍🏾.

Senegalese cuisine is truly one of the best in the world. Apart from the many mouthwatering traditional dishes, it's just awesome how the Senegalese took in dishes from other parts of the french empire and gave them their own twist ( Vietnamese Nems, for example). Mark, thank you for showing and supping with different cultures. Did anyone else notice mom breastfeeding in the back? I think that is so beautiful. That they continue life as if no one is there. He just makes money… he says that basically anything is delicious. He’s like a garbage collector and so his opinion on food is irrelevant. No matter what you give him he’ll say it’s amazing 🤷🏻‍♂️ you can give him a piece of 💩 and say it’s organic and a specialty of your culture and he’ll be like “ohhhh my goooood😍”

I love how they all eat together on the ground with their hands. As a Canadian I've never seen anything like it, but it looks like how a family should eat! this dish looks AMAZING!

How Mark bites into those guana peppers without screaming is incredible! Those 2 ladies were shocked 😁 The green leaves the cook used are not hibiscus leaves but sorrel leaves. She also used white dried sorrel flowers. Red sorrel flowers are used to make sorrel juice that you find in many west African countries and also in the Caribbean.

i grew up in cali in a multi family home and we had a senegalese family living downstairs. we always ate dinner together and senegalese jollof is apart of my best childhood memories. i hope to visit one day thank you Senegal for feeding me!
